Answer:	it's to allow some steam and air pressure to escape the pot. it's basically a safety feature that prevents the pressure created by the steam and the boiling water from over-pressurizing the pot. without it at worst the lid would blow off the top or at best rattle around on top of it. but with it your food gets steamed and none of the problems already mentioned will happen unless it gets blocked in some way. hope this helped a little and as always, please have a good day.

Answer:	Do you mean handles or actual sides? I bought this 3 piece and what a steal it was, because for just the big one alone can run between $30 up to even $80. It holds 18 cups so it's amazing it's very durable and yes thick, buy it you won't be disappointed. I'm not and the rice comes out perfect I'm puertorican and we love the bottom of the rice(pegao) this makes excellent pegao. Buy it it's an amazing deal.

Answer:	hey ary in depth. Because they do not have square corners, it's unreasonable to simply measure from top to botto, Tere is 2-3" workingdepthon the small one, and 4-5" on the largest one. I take the knob off the lid of thew smallest size 9because I don'r know whether it is ovenproof) and toss a rozen chickekden leg quarter in, a cup of bamati rice, two cups water, some soup baase(boouillion granules0) and pop it in the oven. i eventually started making it wit paprike and or turmeri, and it was even better, but in terms of size, that would fill the smallest caldera pretty well. The large caldera was ok for a small pot of chili, although, I usually uusually needed to make a big stock pot, because chili draws visitors, The largest caldera is shallow evough that you can use it to fry burgers in, although I don't recomund aluminum for frying.

Answer:	I didn’t see this mentioned in the other answers. You can use the glass lid for slow cooking and not use the pressure lid at all. Especially when you hand-wash, the glass lid is much easier to wash compared to the standard lid—no seal ring to deal with; a lot lighter; and you can see the food without the need to lift the lid. My instant pot gets used as a pressure cooker less than half the time, and it’s hard to imagine not having the convenience of the glass lid.

The other option that fits inside this pot are TWO wide mouth half pint. These must be WIDE so these are Kerr/jarden brand only for now. These come in 12 packs but are brutal to find, can also be found at hardware stores...stay .true. to your search and you'll find them! Haha ya feel me? For the ability to can 2 or 3 half pints at a time, with all the small batch canning books on the market right now you can can a batch in under an hour for what your small garden produces that day, or what is on sale at the market (even whatever is bruised at the store-can it up for pennies on the dollar!). Plus, the jams, chutneys, caramelized fruit (yes! You can caramelize sugar then add fruit puree, my fave is pear...it's DIVINE) or whatever and it cooks soooo much faster cuz it's a smaller batch. I use the recipes in the small batch canning books, this pot and a 12 inch skillet to cook the recipes in. Answer:	There is no aluminum in this pot it is all stainless steel top to bottom, the bottom pot has a double heat bottom This pot is great for juicing out many different fruits and berries
Question:	the picture shows a black strip on the surface. is it very obvious
Answer:	Not that I am aware of. It does produce steam but to distill water you would need to move the steam to a cool container to condense the steam. Maybe with a jury-rig it could but that would also work with a regular pot and a hose to move the water vapor.
Question:	Can this be used as a double boiler
Answer:	If the bottom pan is aluminum, it will not work on an induction stove without an induction interface disk. I used our aluminum juicer on our induction stove with the disk last year, and it worked just fine. This juicer is apparently not, in and of itself, induction capable; to be so it requires a steel base that can be heated magnetically. If you do not have an induction interface disk, a large enough cast-iron skillet will work. Have to be big enough to sit flat in the bottom of the skillet, full contact to transfer the heat to the aluminum.
