These canners are related to pressure cookers but are specifically designed for canning purposes. Here's what you should know about All American Electric Pressure Canners:

  1. Canning Process: Electric pressure canners, like their stovetop counterparts, are used for the canning process. They create a sealed and pressurized environment within the canner, which allows for the safe preservation of food in airtight containers, typically jars.

  2. Safety: All American Electric Pressure Canners are equipped with safety features to ensure that the canning process is conducted safely. They typically have mechanisms to regulate pressure and temperature and feature safety locks to prevent accidental opening during operation.

  3. Electric Operation: Unlike traditional stovetop pressure canners, electric models use electricity to generate and maintain the required pressure and temperature. This can make them more convenient to use, especially for those who may not be experienced with stovetop canning.

  4. Capacity: These electric canners come in various sizes, with different capacities to accommodate different quantities of food for canning. The size you choose depends on your canning needs and available kitchen space.

  5. Versatility: In addition to canning, many All American Electric Pressure Canners can also be used as pressure cookers. This versatility allows you to use them for various cooking tasks beyond canning, such as preparing soups, stews, and other pressure-cooked dishes.

  6. User-Friendly Controls: These appliances typically feature user-friendly digital controls that allow you to set the desired pressure and processing time, making the canning process more precise and less prone to error.

  7. Preservation: Canning is an effective way to preserve food for long-term storage. It involves sealing jars with high-temperature, high-pressure processing to kill bacteria and other microorganisms, preventing spoilage.

  8. Recipes and Guidelines: When using an All American Electric Pressure Canner, it's important to follow canning recipes and guidelines carefully to ensure food safety. This includes specific processing times and pressure settings for different types of foods.

  9. Maintenance: Like any kitchen appliance, electric pressure canners require regular cleaning and maintenance to ensure their continued performance and safety. Be sure to follow the manufacturer's instructions for cleaning and care.

  10. Accessories: Some models may come with accessories such as racks or trays to help organize jars during the canning process.

All American Electric Pressure Canners offer a convenient and efficient way to preserve seasonal produce and other foods at home. However, it's crucial to follow proper canning procedures and safety guidelines to ensure the safety and quality of the canned products.

Presto

Product description

Pressure canning is the only method recommended safe by the U.S. Department of Agriculture for low-acid foods. Doubles as a boiling water canner for preserving fruits, jams, jellies, pickles and salsa in pint and half pint jars. Also handy as a large capacity pressure cooker. Constructed of warp-resistant, heavy-gauge aluminum for fast, even heating. Works on regular and smooth-top ranges. Deluxe pressure dial gauge registers the complete range of processing pressures. This precise measurement is especially important at higher altitudes. Air vent/cover lock allows pressure to build up only when the cover is closed properly and prevents the cover from opening until pressure is safely reduced. 23-Quart liquid capacity (21.8 liters).

The USDA recommends pressure canning as the only safe method for low-acid foods such as vegetables, meats, and poultry. The Presto 23-quart pressure canner is more than adequate for any home canning needs. It's a professional-quality tool, made of heavy-duty aluminum, with stay-cool handles and a strong-lock steel lid. An accompanying rack fits down into the pot to keep jars up off the bottom, so that liquid can circulate underneath. And it can do double duty as a large pressure cooker. It's easy to cook healthfully with pressure cookers, since the food retains so much more of its nutrients and flavor.

The sturdy lid locks down during canning or cooking; an inner sealing ring keeps the steam in. In addition to a pop-up pressure indicator and a simple steam release mechanism, there is an overpressure plug that will let off steam if it builds up excessively. The pressure dial gauge gives an accurate reading so that pressure can be kept constant during canning. This pressure canner is also a cooker that's useful for weeknight dinners or for any meal that needs to come together quickly. An accompanying booklet contains more than 50 recipes, ranging from basic soup stocks to stews and pot roasts--even sweets like English Plum Pudding or Brown Bread! Tenderize lean cuts of beef or pork, or cook chicken, fish, or vegetables faster than you can in a microwave, and without losing moisture.

Nonabrasive cleansers are best for cleaning this aluminum pressure cooker, though occasional use of a fine metal polish will help the exterior keep its shine. The lid of the Presto 23-quart pressure canner is not immersible. In addition, the sealing ring should be removed after each use to allow cleaning of the inside rim of the lid. The dial gauge is delicate; detailed care instructions are found in the accompanying booklet. The vent pipe is simple to keep clean with a small brush or pipe cleaner, and both the air vent/cover lock and the overpressure plug are removable. The pressure cooker measures 14 inches in diameter (17 inches including handles) and 15-1/2 inches tall (including lid). Presto guarantees this pressure cooker with an extended 12-year warranty. A detailed instruction and recipe booklet is included; special safety issues that pertain to pressure cookers are clearly explained. --Garland Withers

User questions & answers

Question: how pressure is regulated
Answer: I am not 100% sure, but I think they are made in Wisconsin, USA. Hope this helps. Suz
Question: Can this canner be safely used on a glass-surface range? If so, what is the smallest burner on which it can be safely used
Answer: There was a time when canning using pressure cookers was deemed a safe method of preserving. However, since 2006 Presto has not provided information for canning in pressure cookers. The information used to support canning in pressure cookers was based on research done in the late 1970's. The current recommendation from the United States Department of Agriculture indicates that to pressure can you will need to use a vessel that is specially a pressure canner, which holds at minimum four quart-size jars. Note that pressure canners are generally 12-quart size or larger. Question: How many qt jars can be canned in this pressusre canner
Answer: Respectfully, any time I've ever had problems over the decades with beans not cooking evenly it was invariably due to a batch of mixed old AND new beans. This happens more than you might think, and unfortunately a recent purchase of mine of small red beans in 25 lb. bulk are proving to be exactly that. Soaking an extra couple of hours seems to help a little (10 hours instead of 8) and then bringing to full heat and pressure a little more slowly, then pressure cooking one extra minute than you normally would. All those things together will help when old and new beans have been mixed together.

User questions & answers

Question: WILL THIS COOKER/CANNER HOLD 1/2 GAL JARS? HOW MANY
Answer: Contact Ball directly. My best advise.
Question: does it come with a wire rack
Answer: This canner can be used for fruits, tomatoes (not low-acid), jams, jellies, pickes and other preservative. Absolutely no vegetables like carrots or beans, meats, poultry and seafood. Anything you can with a boiling bath canner can be used with this canner. It holds 7 quart jars. If you would can carrots or beans, they are low-acid vegetables, they most likely be hazardous to your health because the canner does not get "hot" enough to control bacteria from growing in the jars.
Question: is it safe on electric stove
Answer: No. It is for water bath canning only.
Question: for those who have a glass top, and you own the 15qt & up pressure canner, does it work ok with the eye being smaller than the bottom
Answer: It's a water bath canner not a pressure canner....only items you can water bath
