Question: How does the manufacturer pre-season this pan....i.e., with what materials....resin, oil or
Answer: Think of seasoning like this: if a pan says it is "seasoned" by the manufacturer, that simply means it is "food grade anti-rust protection". You can use the cleaning mode on your oven to remove this layer and apply your own although it will heat up your house and stink it up as well with burnt oil. Your best bet is to take some sand paper to it and smooth it out so it's not so rough to remove some of the "seasoning" applied by the manufacturer and then reseason it with whatever you'd like. You can use pretty much anything you have on hand although I'd recommend something cheap but with a high smoke point like peanut oil or canola oil. I personally prefer peanut because when it burns it tends to smell sweet and canola tends to smell fishy. Aside from that if the above paragraph sounds like too much work, just start using it out of the box after washing it well and you'll never have to worry about it. The more you use it the better the seasoning will get. You can use wood, plastic or metal spoons or spatulas but I'd avoid plastic because it'll melt on ya. It will be strong like glass once it's seasoned properly. I personally use a sander on any new cast iron that isn't pre-polished. I know it will wear down over time but I just hate the rough finish it has and prefer to get it broken in quicker.

Answer: I don't know. Mine came with the handles. I use them like everyday. The handles are a big help when moving it. My husband doesn't cook, however he is my set up team in the morning. He chooses my pots and skillets. Since I started using thee, he always have one or both on the stove waiting. My mom loves to fry fish and chicken in her cast iron pot. She told me buy cast iron and take care of them and they will out live any skillet I own. So I will get her a set and write the seller about the handles. If doesn't get the handles as promised, I would send it back also, unless the agree to send the handles. The skillets are with keeping.

Answer: Surprisingly, no. This skillet is not sticky to cook. Not even cheese really sticks like in some pans, and the skillet cleans easier than I expected.

Answer: The cast iron skillets made in China that are made for use in the USA have to meet specific FDA regulations. So grab them up quickly as the current administration in Washington DC is getting rid of a LOT of regulations for clean air, clean water, specific regs for cooking utensils made elsewhere. Otherwise get Griswold, Wagner, or Lodge pans all made here in the USA. Or you can go to yard sales, farm sales etc and find one made 75 years ago. But come on! How many great chefs do we have here? As a doctor I love the people who get upset about cast iron pans, then drink sugar sodas (probably #1 for obesity and heart disease) and all processed foods. Folks who go for gluten-free when the only people who need it are those with celiac disease...and so on. These Chinese made pans are cheap---that’s why we buy so much stuff made in China.

Answer: This is actually a complicated answer that depends primarily energy dissipation. Cast iron's higher carbon content translates to a very stiff molecular structure of iron, carbon, silica, and impurities; which is physically very hard and has more ceramic / brittle characteristics than ductile metals. Cast iron won't bend; structural failure is driven by unpredictable and catastrophic crack propagation. Cast iron will shatter like a clay pot in a direct strike, but has a very high surface hardness, resilient to compression and superior at deflecting less-hard materials. If you bought 20 or so skillets and embedded them in a matrix of rubber and kevlar at varying surface normal angles, it would protect against smaller firearms. Need thicker plate for bigger rounds.

Answer: Skillet will fit on top of dutch oven, not sure the seal is tight because the skillet has vents on the edge. The lid that comes with the set fits both the skillet and the dutch oven.

Answer: good idea to use parchment paper between the cast iron and glass INDUCTION cooktop. Not sure if this will work on electric cook tops - check parchment paper temperature rating, but most is siliconized so it should work...test however.
Question: When you grease the cookware how do you store it to keep the grease from becoming rancid
Answer: Don't "grease" your pan just use a very light coat of lard, bacon grease or crisco to season your pan after washing and drying well. Then place the pan in the oven at 450 for about an hour. Wipe about at 15 and 30 minutes into the baking process.
Question: Mine got rusty from sitting around, what can I do about it , if anything
Answer: Most important thing with CI cookware is keeping them 'seasoned'. An old one, I cleaned itwell, used a steel wool scratchier a few drops of dawn, totally dry, and covered the pot completely with a coat of Crisco. Turn Oven to 350° place rack on the lowest slot, put a heavy piece of foil there Lay the pot/skillet in the oven upside down and 'bake ' for 1 hour. Shut the oven off and leave in there until cool. Now if it really rusty and you cannot remove the rust, Lodge says to take it to a Machine shop and have it sandblasted. Quickly home, wash it with hot water, a scrub brush and 1 drop of Dan, rinse and coast with Crisco and proceed as above. Any questions contact Lodge www.lodgemfg.com or call CS at 423-837-7181. Most important is when done using ..clean it out with hot water dry and coat with Crisco when it is still warm. I stack in the cabinet, using parchment paper liners between each pan/pot. Question: why is this black vs DeBuyer's which is silver? both say carbon steel. thanks
Answer: I don't know but I suspect the DeBuyer's pan is made from the kind of steel that a steel griddle is made of. The Lodge pan has a very slight dimpling to the steel and it is black and looks very much like a cast iron pan but the metal is much thinner. I have been very happy with my pan. It easily cooks delicate foods like fried fish. I suspect the DeBuyer's pan would also.
Question: what is the difference between this pan that is carbon steel and a regular lodge cast iron? can i use this pan in the oven like a cast iron
Answer: Luis,There are a number of differences. First, the pan is much lighter, as the thickness of the steel is much less than cast iron. This also means that it has less "heat inertia." It heats up more quickly and evenly, and cools down faster when removed from heat, giving you much better control of the cooking process. It is very sturdy. An advantage it has over stainless steel (besides being cheaper) is that, like cast iron, you can use it at very high heat without damaging it. This makes it perfect for high temperature searing. These are the only pans I use for searing meat and fish and then finishing in the oven (yes, perfectly oven safe). As they are pre-seasoned, they start with a stick-resistance, and if used properly and NEVER cleaned with soap, they becoming surprisingly "non-stick". I sear at very high heat (you do need some oil), and all I need to do is run hot water over it, wipe it out, and maybe rub a little oil in using a paper towel.
Question: Looking for a dedicated non-teflon egg pan. Should I go with this or cast iron
Answer: I have the 12" version of this pan and use it for 4 eggs over easy at least five days a week. However, there is a learning curve with this pan and you will need to spend some time properly seasoning it and maintaining that seasoning it. When I first started using it I cursed it every morning but forced myself to adjust to it as I was coming from a nice Teflon pan. That said, for the value cast iron will also be terrific and honestly is a little more forgiving ( just remember to keep the heat on both pans a lot lower than you are properly used to and let them preheat: I go about 2 min. On medium and then reduce to just a hair under medium low on my gas range for another 2 minutes before adding butter and then frying the eggs). The 12 inch version is a must if if you are cooking for more than one. I also use it for scrambled eggs and omelets for which it now does a good job after having been seasoned well beyond what comes from the factory.

While we are proud of our recent history, there is a backstory. So travel with us to the small town of South Pittsburg, Tennessee at the end of the 19th Century. Nestled at the base of the Appalachian Mountain’s Cumberland Plateau and on the banks of the Tennessee River, the town was abuzz with new opportunities.

In 1896 Joseph Lodge began a cast iron foundry, named in honor of his minister, Rev. Joseph Hayden Blacklock. Family owned, our origins were humble and our products varied, from stoves, to skillets and kitchen sinks.

As each decade passed, Lodge developed a business model to continually update and improve equipment and foundry practices. Work was labor intensive, with all of our cookware poured and cleaned by hand.

The 1950s saw the installation new molding machinery, mechanized sand delivery systems, the construction of a gas fired aluminum furnace to cast patterns for the production of sand mold impressions and a machine to clean castings.

When the introduction of new cookware metals and coatings increased competition in the 1960s, Lodge countered with a Disamatic automatic molding machine. Two years later, Lodge added an electric furnace to operate the Disamatic molding and pouring system, outpacing the capacity of the coke-fired cupola, at lower cost.

The Clean Water and Air Acts of 1970 led American companies to install new equipment to meet the pollution control laws. Lodge accepted the standards by replacing the old electric furnaces and adding a second Disamatic molding machine.

Not only did the updates meet the requirements of the Clean Air and Water legislation, by 1976 our automated processes produced as many molds in an hour as one man’s daily productivity 30 years earlier.

With the switch from antiquated electric furnaces to more efficient induction furnaces, 1991 proved to be a pivotal juncture in the green standards of Lodge Manufacturing Company. The use of magnetic energy to produce heat changed our status from a Large Quantity Generator of Hazardous Waste to a Small Quantity Generator, and we received the 1994 Tennessee Governor’s Award for Excellence in Hazardous Waste Reduction.

Question: Can I leave the silicone covers on while I season them again
Answer: No you can't. In the book that comes with it says to use the silicone handles or heavy duty oven mitts when using them so I didn't use them while seasoning.

Answer: The company has a lid that you can purchase on Amazon, as I did for the 12inch pan I bought. It works wonderfully with the pan.
Question: how to keep food from sticking
Answer: Hot pan, cold oil. Keep your pans seasoned. Don't put your food in until your oil is well heated, cold oil will cause your food to stick. Let your food cook a while before you flip or move it.

After hand washing your cookware, simply place it on a burner for a few minutes to dry and then rub on a thin layer of the cooking oil of your choice. Lodge Pre-Seasoned Cast-Iron Skillet

The black patina given to the cookware by the factory seasoning process is, in fact, vegetable oil that has been baked into a piece of cookware that has emerged from an individual sand mold. This coating of oil is a functional application and not a cosmetic application. The cookware is hanging as it rides through the electrostatic sprayer and commercial conveyor ovens at very high temperatures. This allows the oil to penetrate deeply into the pores of the iron which creates an easy release finish. As a result of this process, you may see a blister or bubble of oil at the southern-most point or at the end of the handle of the cookware piece. If visible, it will rub or flake off with your finger, leaving a brown spot. Don’t worry, it’s not rust but a seasoned spot that is brown, indicative of the varnish stage of seasoning. As a matter of fact, this is the color of home seasoned iron until it has been used several times. The brown spot will turn black with use.

Lodge is a zero hazardous waste stream foundry. Lodge designed a vegetable oil recycler for the seasoning process to reduce waste and unusable oil is recycled and used as biodiesel generator. Lodge uses recycled and biodegradable packing materials. Reuse of foundry sand used in the casting process is recycled and unusable sand, works to purify the water of the local streams and planting trees to improve air quality and beautification.

The Clean Water and Air Acts of 1970 led American companies to install new equipment to meet the pollution control laws. Not only did the updates meet the requirements of the Clean Air and Water legislation, by 1976 our automated processes produced as many molds in an hour as one man’s daily productivity 30 years earlier.

With the switch from antiquated electric furnaces to more efficient induction furnaces, 1991 proved to be a pivotal juncture in the green standards of Lodge Manufacturing Company. The use of magnetic energy to produce heat changed our status from a Large Quantity Generator of Hazardous Waste to a Small Quantity Generator, and we received the 1994 Tennessee Governor’s Award for Excellence in Hazardous Waste Reduction.

While we are proud of our recent history, there is a backstory. So travel with us to the small town of South Pittsburg, Tennessee at the end of the 19th Century. Nestled at the base of the Appalachian Mountain’s Cumberland Plateau and on the banks of the Tennessee River, the town was abuzz with new opportunities.

In 1896 Joseph Lodge began a cast iron foundry, named in honor of his minister, Rev. Joseph Hayden Blacklock. Family owned, our origins were humble and our products varied, from stoves, to skillets and kitchen sinks.

As each decade passed, Lodge developed a business model to continually update and improve equipment and foundry practices. Work was labor intensive, with all of our cookware poured and cleaned by hand.

The 1950s saw the installation new molding machinery, mechanized sand delivery systems, the construction of a gas fired aluminum furnace to cast patterns for the production of sand mold impressions and a machine to clean castings.

When the introduction of new cookware metals and coatings increased competition in the 1960s, Lodge countered with a Disamatic automatic molding machine. Two years later, Lodge added an electric furnace to operate the Disamatic molding and pouring system, outpacing the capacity of the coke-fired cupola, at lower cost.

Victoria was founded in 1939. We are a three-generation family business located in Medellín, Colombia. Answer: YES! Ignore misinformation, cast iron is Ferromagnetic as is carbon steel. That's how induction works. Just be aware cast iron quickly gets very hot on an induction where a household gas range can take quite a while to heat it.
Question: Is the bottom of the grill pan flat so it can be used on an electric cooktop
Answer: It is flat, however, always use caution when using cast iron on glass/ceramic tops as "back and forth" movement can cause scratches depending on your glass-top and the manufacturer's suggestion.
