How To Season Your Cast-Iron Skillet: Scrub skillet well in hot soapy water. Dry thoroughly. Spread a thin layer of melted shortening or vegetable oil over the skillet. Place it upside down on a middle oven rack at at least 450 degrees. Most oils need this heat to start the chemical reaction to cling to the cast iron. (Place foil on a lower rack to catch drips.) Bake 1 hour; let cool in the oven. Repeat 2 0r 3 times until the pan is a s slippery as ice. |

After cooking, we recommend cleaning with a stiff nylon brush and hot water. Using soap or the dishwasher is not recommended, and harsh detergents should never be used. Towel dry immediately cleaning and apply a light coating of oil to utensil while it is still warm. But because it's already damaged through this barely acceptable "pre-seasoned" layer. After you get your skillet back to a smooth surface, Fry some chicken in it or use Crisco or lard when you first cook in it as the fats will bind with the iron as it heats. Don't use too high of a heat until you have reseasoned it well. I use a rough steel wool for removing food or a green scrubby if I don't think it's too bad. Yes I have used soap but very little and never soak it for more than a hour. I always follow up cleaning my skillets by heating them at a medium heat on the burner then use a generous amount of Olive oil then put it in my oven upside down to cool. |

Answer: | Heating is very similar to regular cast iron. It gets hot and holds heat well. The enameling means it doesn't need to be seasoned (except maybe rubbing a little oil around the rim edge, which is exposed and not enamel-covered}. It is also more non-stick, rust-proof, even heating and can be deglazed very easily, and in general, is easy to clean. You can also cook acids without it affecting the pan. Be careful not to bang it too much with metal utensils, as it will chip the useful and attractive enamel, however if it does chip, it has no affect on cooking, as it is just regular cast iron underneath. Regular cast iron can be used on outdoor grills and over campfires (open flames), but not recommended with enameled. Also in the case of this pan, it can also be covered to work as a dutch oven, though not as deep, more like a skillet version. |

Answer: | I have both sizes. We are now a family of 2. I used to have to cook for 6 daily. The smaller one I use now is from Staub my other favorite cast iron cookery maker. I love both Le Creuset and Staub. Have had them both for at least 20 years. Both are still like new and well worth their initial ost. The smaller one is used for cooking for 2 people and it fits in my Breville toaster convection oven. The larger one from Le Creuset goes from induction and at one time gas stovetop range to oven. No problem. Even heat, Easy clean up if you treat them well. Like I said mine are 20 years old and still look almost new. They have outlasted my Lodge, Cuisinart and other makers by years ....even decades. Treat them well and you will hand them down as heirlooms. One last thing. These Braisers replaced my old non stick electric skillet from my bachelor apartment days. Yes they have been worth every penny. Notbhing goes from the stove to tbe oven to the table that looks as well and cooks as well as these enamelled cast iron classics. Lodge Pre-Seasoned Cast-Iron Skillet
The black patina given to the cookware by the factory seasoning process is, in fact, vegetable oil that has been baked into a piece of cookware that has emerged from an individual sand mold. This coating of oil is a functional application and not a cosmetic application. The cookware is hanging as it rides through the electrostatic sprayer and commercial conveyor ovens at very high temperatures. This allows the oil to penetrate deeply into the pores of the iron which creates an easy release finish. As a result of this process, you may see a blister or bubble of oil at the southern-most point or at the end of the handle of the cookware piece. If visible, it will rub or flake off with your finger, leaving a brown spot. Don’t worry, it’s not rust but a seasoned spot that is brown, indicative of the varnish stage of seasoning. As a matter of fact, this is the color of home seasoned iron until it has been used several times. The brown spot will turn black with use.

While we are proud of our recent history, there is a backstory. So travel with us to the small town of South Pittsburg, Tennessee at the end of the 19th Century. Nestled at the base of the Appalachian Mountain’s Cumberland Plateau and on the banks of the Tennessee River, the town was abuzz with new opportunities.
In 1896 Joseph Lodge began a cast iron foundry, named in honor of his minister, Rev. Joseph Hayden Blacklock. Family owned, our origins were humble and our products varied, from stoves, to skillets and kitchen sinks.
As each decade passed, Lodge developed a business model to continually update and improve equipment and foundry practices. Work was labor intensive, with all of our cookware poured and cleaned by hand.
The 1950s saw the installation new molding machinery, mechanized sand delivery systems, the construction of a gas fired aluminum furnace to cast patterns for the production of sand mold impressions and a machine to clean castings.
When the introduction of new cookware metals and coatings increased competition in the 1960s, Lodge countered with a Disamatic automatic molding machine. Two years later, Lodge added an electric furnace to operate the Disamatic molding and pouring system, outpacing the capacity of the coke-fired cupola, at lower cost.
After in the introduction of seasoned cast iron cookware, Lodge broke ground for our foundry expansion. With completion of the first phase in the fall of 2014, the expansion includes a new melt system, an additional pouring/molding line and most importantly—new American jobs!
In more ways than he could have ever imagined, Joseph Lodge would not recognize the business he started over a century ago. Answer: | I don't know but I suspect the DeBuyer's pan is made from the kind of steel that a steel griddle is made of. The Lodge pan has a very slight dimpling to the steel and it is black and looks very much like a cast iron pan but the metal is much thinner. I have been very happy with my pan. It easily cooks delicate foods like fried fish. I suspect the DeBuyer's pan would also. |

Answer: | Luis,There are a number of differences. First, the pan is much lighter, as the thickness of the steel is much less than cast iron. This also means that it has less "heat inertia." It heats up more quickly and evenly, and cools down faster when removed from heat, giving you much better control of the cooking process. It is very sturdy. An advantage it has over stainless steel (besides being cheaper) is that, like cast iron, you can use it at very high heat without damaging it. This makes it perfect for high temperature searing. These are the only pans I use for searing meat and fish and then finishing in the oven (yes, perfectly oven safe). As they are pre-seasoned, they start with a stick-resistance, and if used properly and NEVER cleaned with soap, they becoming surprisingly "non-stick". I sear at very high heat (you do need some oil), and all I need to do is run hot water over it, wipe it out, and maybe rub a little oil in using a paper towel. |

Answer: | I have the 12" version of this pan and use it for 4 eggs over easy at least five days a week. However, there is a learning curve with this pan and you will need to spend some time properly seasoning it and maintaining that seasoning it. When I first started using it I cursed it every morning but forced myself to adjust to it as I was coming from a nice Teflon pan. That said, for the value cast iron will also be terrific and honestly is a little more forgiving ( just remember to keep the heat on both pans a lot lower than you are properly used to and let them preheat: I go about 2 min. On medium and then reduce to just a hair under medium low on my gas range for another 2 minutes before adding butter and then frying the eggs). The 12 inch version is a must if if you are cooking for more than one. I also use it for scrambled eggs and omelets for which it now does a good job after having been seasoned well beyond what comes from the factory. |

Always match the pan’s base size to the stovetop heat zone to maximize efficiency, and to prevent overheating of the pan sides or damage to the handles.
Gas flames must always be confined to the base area, and must never extend around the sidewalls of the pan. Long handles should be positioned safely where they do not hang over the front of the stove or other heat zones.
Cleaning and Care
Always cool a hot pan for a few minutes before washing.
Do not plunge a hot pan into cold water. While Le Creuset’s enamel is designed to be the most durable on the market, thermal shock may still occur, resulting in cracking or loss of enamel.
If there are food residues, fill the pan with warm water and let soak for 15 to 20 minutes before washing. A brush can be useful for removing small food deposits, or for cleaning between the ribs on grills. Do not use scourers or abrasive cleaners on the cooking surface. To avoid damaging the enamel, do not use metallic pads or harsh abrasive cleaning agents.
Light stains or metal marks caused by metal tools can be removed with Le Creuset cookware cleaner. An occasional cleaning with this product will also retain the new appearance of your pans. Le Creuset enameled cast iron is extremely durable but it may be damaged if accidentally dropped or knocked against a hard surface.

Answer: | 1. season your salmon with some oil seasoning paste (oil + seasoning+ salt+ other spices of your choice). Let rest for 10-15 mins for the oil seasoning paste to be absorbed into the fish. If you don't like highly-seasoned foods, then make sure you buy good quality salmon, and you can just season it with some salt and a thin layer of oil, then adding some fresh lemon juice before serving. If you want to skip the oil too, then you need the part of the salmon that has more fat)2. Heat the pan until very very very hot, you don't need to put oil into the pan.3. Use medium high heat. Put the fish with the side you want to present on the plate DOWN. Seal for 2-4 mins depending on the thickness of your salmon.4. Flip the fish when you see the meat is almost half way cooked (you will notice the cooked part has a slightly different color)5. Turn OFF the heat or turn the heat down to low, because the heat from the pan will cook the meat for you and this process will prevent from over-cooking your fish.6. Cook for about 2 to 3 mins or until you see the color of the fish meat is slightly pinkish and when you press the fish with your finger the meat will not bounce back.7. Serve with some freshly cut lemon wedges, the squeeze the lemon juice on the fish before eating. |

Answer: | Cast iron cookware is my favorite! I usually just rinse with hot water and use a mild scrubber on mine. After some time, however, my cast iron gets buildup on the sides - I put the pans in the self-cleaning oven and they come out like new. They do have to be re-seasoned but that doesn't take much effort. I'm sure it would work fine on this ridged pan that is sure to be more difficult to clean. |

Answer: | Much better. I have this Lodge and the LC enamel version. Trust me on this - never buy this style pan with enamel coating. Grill type pans are more difficult to clean because of the ridges, nooks & crannies. Because cast iron seasons better and becomes more non-stick than enamel, it is MUCH easier to clean with use. My LC is in the garage awaiting disposal. I love LC, but their grill pans should be avoided. |
