Answer: | HiSticking will occur when:1/the stone is not hot enough, this is the main reason of sticking.In the convection oven without heating tubes, it will take longer to preheat. We advise you to turn on the top broiler and put the stone on top rack to preheat with the highest temperature of your oven. Maybe you can burn the stone on burner, and it will heat up much quickly. You can also use infrared thermometer to get the temperature. If the temperature lower than 450F, the pizza may won't have brown bottom, even turn out to be sticking. It's hard to tell the accurate preheating time of reaching that high temp because it always depend on the performance of the oven or grill. One hour probably not enough in some ovens which can't reach their indicated temp. Infrared thermometer will show you the right way.2/ the dough is too wet. For this, dusting some flour or cornmeal with your dough is useful, you can also put parchment paper on the stone to prevent sticking. see less |

Answer: | I have to strongly disagree with the seller. I and my family (including children) have used racks with other stones for years and never had an issue. Peels are great if you have a elevated stove, but if you have to crouch down for a lower level oven they can become unstable and its a great recipe for a 425 degree pizza on the foot. Finding a rack from another brand in 16" has become a pain and I will have to basically throw away a competitors stone if I want to acquire one. All things considered I should have shopped more. I recommend you offer it as an option and let your customers decide. |

Answer: | Yes, I make homemade pizza dough all of the time and sometimes I also buy the dough in the frozen section of the grocery. The trick is to make sure that it will slide off of whatever surface you are actually constructing the pizza on. I make my dough and then build the pizza entirely on a piece of parchment paper. I then slide the pizza with toppings on the parchment paper into the oven. Another way is to dust the work surface and the pizza stone with a little cornmeal so that that dough slides off nicely. Before I had a pizza peel, I slid the dough off and on the stone with a cookie sheet that had a flat edge on one side. It was an inexpensive way to manage the dough and I already had the baking sheet in my kitchen. There are a lot of ways to so this, just make sure to follow the recipes that Cast Elegance sends you and to read and follow the Use and Care instructions carefully. How Do I Choose the Right Size?
Choose the right size for your oven by measuring the shortest useable side of your oven rack.
If your rack slopes upwards at the back of your oven, omit that space from your measurements.
Most ovens will only accommodate the 14-inch diameter round stone or the 14 x 16 inch rectangular stone. The 16-inch round stone will not fit many ovens.
How Do I Clean My Pizza Stone?
Never clean with soap or chemicals!
Always dry well in the oven before using. If chemicals or soap are used, they will soak into the stone and create an odor when they are heated. Also never season the stone with oil. The oil will soak in and create a smell when it burns off. Store the stone in the oven when not in use. It will keep the stone safe and dry and will actually improve the temperature profile of the oven and help the oven perform better.
