Answer: For the very crispy/greasy, you'll need to use about 1/4 cup of oil and cook on bottom rack. Look for Pizza Hut pan copycat recipe.
Question: How about 16 inch
Answer: Pizza hut uses 9oz of dough in 9" (small pan), 12oz in 13" (medium), and 15.5 oz of dough in 15" (large) pan. 15.5 oz is about 3-1/4 cups flour. The difference between pizza hut pan pizza dough and any other recipe is typically just about the use of 1/4 or so volume of water replaced with milk. I use 1/4 cup in total of 1 cup water as my starting moisture and add water a teaspoon at a time to get soft, moist dough. The rising process (with milk) creates souring of the dough for flavor. For 16", you can use the 'large' 17oz of dough. I did the calculations years ago and make my dough as 3-1/4 cups flour, 1-cup total fluid with 1/4 cup milk, 1 pkg yeast, 1tsp oil, 1Tbs sugar, pinch of salt. Add sugar to water and stir in, add yeast stirring as you add, add oil, and milk and salt. Pour over flour while mixing. Use spatula to stir as you mix. Add small amounts of water, 1tsp at a time to pull the dough together until soft but not sticky.

Answer: This pan is made from heavy gauge aluminum, hard coat anodized and finished with an easy release finish. There are good reasons to use this type of pan over steel. For one, you must season steel pans which takes a lot of time and if not used regularly (several times a week) the seasoning can flake off. Steel pans also rust. LPK pans do not need any seasoning, they never rust, are metal utensil safe and are very efficient at conducting heat. Many pizza restaurants use our pans, including brands you certainly know.

Question: Does the pizza stick? Is a large amount of oil needed
Answer: No, a large amount is not needed, but it won't hurt it. There is a permanent stick-resistant coating that will not chip, peel or flake and is metal utensil safe that is applied to each pan. I would recommend using oil, butter, crisco, some sort of releasing aid for an even easier. But a large amount isn't necessary.
Question: Is the pan supposed to have a perfume smell??? Washed per instructions and has a smell to it. I use original Dawn dish soap

While we’re at a loss as to explain the odor that you detected, I would imagine that if the pan is left outdoors where it can be exposed to sunlight and fresh air, that should alleviate the problem. Question: What temperatures can this pan take? My wood fired pizza oven goes up to around 950* F
Answer: All of the LloydPans PSTK coated products are safe to 700° F. That said, with food in the pan it will never get to this temp because the pan temp is never much higher than the food temp within. Food at 750° is burnt to a crisp. We have many commercial pizza restaurants using these pans in their wood-fired ovens with great success. With food on the pan there is not really a max temperature. Question: Can you roast vegetables in the oven with this pan
Answer: Yes. After using the steel with the holes, I was really glad that I had made this choice. It is definitely easier to move using the holes. From the research I did prior to purchase of the I/4 inch steel, it was reported the 3/8 inch steel held the heat longer. I was leaning toward purchase of the 3/8 inch steel which weighs approx. 24 lbs. vs the 1/4 inch steel which weighs approx. 16 lbs. To get an idea of what that would be to lift the steel in and out of the oven, I weighed my pizza stone which has the approx dimensions of the is the steel but weighs 12-13 lbs. That helped me to make the decision to purchase the 1/4 inch steel. I do preheat the steel at 400 degrees for an hour prior to baking the pizza. I have found that the 1/4 steel makes a nice brown crispy crust. If I am going to make more than one pizza, I do allow the steel to reheat for about 10 min before baking the second pizza. I hope this helps. The only other thing I did prior to my purchase was to measure my oven to make sure it would fit.
Question: What are the interior dimensions of the pan
Answer: Yes, it comes with instructions. No recipes. I love the Ken Forkish book, The Elements of Pizza, for recipes.
Question: Can you tell me what is the maximum oven temperature this pan can safely withstand? Also, is there an 18x12 version that can be purchased
Answer: I thought it would work well on my gas grill but I had issues - maybe it was my grill. I was cooking multiple pizzas so I'd cook one pizza, take it off, cook another, etc. The first pizza was great. But as I went on the steel couldn't get back up to temperature fast enough and it took longer and longer to get the pizzas done. For my setup my oven works better. There was no problem with the steel on the grill - nothing physically went wrong and nothing was damaged. I just couldn't keep enough heat in the steel.
Question: what country is this made in
Answer: I don't. Unless you need steel stone's capability, you are wasting energy two ways - to heat up a significant metal mass and then, when you are done, cooling it. The fan in my oven runs longer if I leave the stone in it.

Answer: It doesn't have a place of make on the pan. I have had mine for two years and it still works great. Dishwasher safe and no warping.

Answer: Mine measures 12.5” across top rim and 12” across the base. I’m very satisfied with this pans performance. Non stick works perfectly and the pan has not warped or lost its shape after many uses.

Answer: I used it once, frozen pizza at 425. It came out of the oven a little warped. Not sure I will use it again.
Question: What is the rim-to-rim diameter in the short direction (not the handle direction
Answer: We make pizza using Bob's Red Mill GF mix quite often using this stone. We do not preheat the stone. However, their directions have you make the dough, let it rise, then press it out on the (room temp) stone and precook the dough/crust. This is before adding toppings, and then finishing it for another 10-15 minutes in the oven. So the stone is not preheated in the first step, but the oven is preheated for the first step.

Question: Do I need to put a little olive oil on my raw dough or the pan before baking? Or just knead the dough with a little flour and stick it on
Answer: If you do not cover every square inch with cooking spray, it WILL stick. I just ruined my pan because I forgot. Grease it well, do not rely on the non-stick. Cooks fabulously otherwise.
Question: Usually, fresh pizza needs to be cooked at about 450 degrees. Can this pan handle that high of heat
Answer: I often cook pizzas at 500 degrees. Anyone ordering this pan will see why it does not warp at high heat. It is very solid.
Question: Can a pizza wheel be used for cutting without damaging the pan
Answer: Yes you can use a pizza wheel to cut on this pan. It is very durable and does not scratch. Best pizza pan I've ever used!
Question: Can I bake use this to bake pizzas at a high temp (500 degrees) as I would with a stone
Answer: The packaging says it's oven-safe up to 450º; Joe Beddia's "Pizza Camp" advises 500º or even 550º if possible. I'm about to use this pan for the first time, and my oven goes to 525 (i.e., Spinal Tap's 11), so we'll see...
