Answer: | The trick is to dry cast iron quickly. After washing, place it on a burner and turn on the burner for a short time so the residual water evaporates. That is also the time when I might add a coating of oil then wipe off the excess oil after the pan has cooled. I have been doing this with cast iron pans for a zillion years and these hand-me-down pans will probably outlast the apocalypse. Happy cooking! |

Answer: | Yes. Any pan bottom that attracts a magnet will work on an induction stove. To avoid scratching the glass cook-top just cut a piece of reusable non-stick oven liner (same as non-stick barbecue/grill liner) and place under the pan when on the stove. WARNING: Just don't go beyond about 70% with the burner setting. I do that ALL the time with perfect cooking results, and NO SCRATCHES! There's a liner here on Amazon that can withstand 500 degrees, while most others are only good for 400 degrees. Go with the 500 degree one. |

Answer: | How high you cook at will depend on the altitude where you live. Higher altitudes require higher temps. However, the temp should not differ more than 25 degrees. I am a mile high and I cook pizzas at 425 degrees. I like the cheese baked, not just melted and at about 10 minutes, comes out perfectly. |

Answer: | Think of seasoning like this: if a pan says it is "seasoned" by the manufacturer, that simply means it is "food grade anti-rust protection". You can use the cleaning mode on your oven to remove this layer and apply your own although it will heat up your house and stink it up as well with burnt oil. Your best bet is to take some sand paper to it and smooth it out so it's not so rough to remove some of the "seasoning" applied by the manufacturer and then reseason it with whatever you'd like. You can use pretty much anything you have on hand although I'd recommend something cheap but with a high smoke point like peanut oil or canola oil. I personally prefer peanut because when it burns it tends to smell sweet and canola tends to smell fishy. Aside from that if the above paragraph sounds like too much work, just start using it out of the box after washing it well and you'll never have to worry about it. The more you use it the better the seasoning will get. You can use wood, plastic or metal spoons or spatulas but I'd avoid plastic because it'll melt on ya. It will be strong like glass once it's seasoned properly. I personally use a sander on any new cast iron that isn't pre-polished. I know it will wear down over time but I just hate the rough finish it has and prefer to get it broken in quicker. |

Combine the water (1 cup) with yeast and a little sugar (yeast food) and wait a few minutes to ensure the yeast is active. Add flour and salt (1.5 teaspoons) and combine until the dough comes together and leaves the side of the mixing bowl clean but is still tacky to the touch. Kneading is the key to great dough so knead it until it develops a sheen, then form into a ball, oil lightly the dough and the bowl and let rise for 5 to 6 hours. Beat down and knead 30 minutes before you need it and form (do not roll out with a rolling pin) into your desired shape. Let it rest while you get the other ingredients ready and preheat your oven as hot as possible. There is another design of pill boxes, where you press a lever and the compartment opens up. But this pill box is less expensive and is an improved design. |

Answer: | It sounds like your dough is too wet. Try giving the dough a really heavy dusting of flour before putting it through the cutter. I found that when I make the angel hair it helps to sprinkle the cutter blades with flour too. |

Answer: | First make the pizza dough in a large bowl. Second roll it out on a table (with flour) and then place it on the pizza pan. Then add your favorite sauce, cheese, toppings. DO NOT put wet dough on the pizza pan. Also, if u want the pizza to rise well I use a pizza stone for homemade pizza and this pizza pan (the one with holes in it) I use for frozen pizza or pizza bagles or pizza bread... |
