Answer: | Yes, proofing basket works great with sticky doughs. I recommend flouring inside the banneton and leaving it there for about 2 or 3 days before first using it with a sticky dough. Answer: | I have this same brand in the 9 inch round and I always leave it in the refrigerator for 12-36 hours. I just cover it with plastic wrap, but leave the basket bottom exposed. I find it bakes and tastes best with the longer fermentation, and the basket works great. I've have been using the two 9 inches rounds for about a year. |

Answer: | it matters mostly because it is a food processing item and getting poisoned from this scares me. China also doesn't care about child/forced labor, using chemicals on things that can kill you, and sending knock off garbage. I trust USA first then European countries. |

I prefer to bake my bread in a Dutch oven at 475 degrees, lid on for 30 minutes, then off for 15. I get a beautiful artisan loaf, with lines from the basket, floured and divine crust, reliably! |
