Broad Bean Hummus

1½ oz pumpkin seeds1. Bring a small saucepan of salted water to the boil. Prepare an ice bath. Add the beans and blanch for 1–2 minutes until the shells have just loosened. Use a slotted spoon to transfer the beans to the ice bath. When cooled, slip the shells off and discard.
