Beet and Whole Grain Salad with Arugula and Pistachios

There’s so much to love in this nutritious and delicious recipe, including beets, goat cheese, pistachios, organic quinoa, and brown rice. It’s a great way to start a meal-or enjoy it whenever you’re in the mood for an incredible salad.

Prep Time: 15 minutes Total Time: 40 minutes

Servings: 6.

Directions

1. Heat oven to 400°F. On large baking sheet, toss beets with oil, salt and pepper.

2. Roast 30 to 40 minutes, stirring twice during roasting, until beets are tender. Cool slightly.

3. Meanwhile, whisk together all Vinaigrette ingredients.

4. Empty contents of Seeds of Change Quinoa and Brown Rice in large bowl, breaking apart any large pieces.

5. Add roasted beets, arugula, pistachios, and goat cheese; toss with Vinaigrette. Serve immediately.

Tip: Substitute baby spinach or mixed spring greens for the arugula.

Arugula can be grown from seeds in all zones; but it prefers cooler temperatures with full sun or partial shade. In cooler regions plant in the spring, late summer and fall. In warmer regions plant in the fall for a winter harvest. Disperse seeds evenly, 1-2 weeks before your last frost date, to create a bed of tender leaves. Keep soil evenly moist; and thin seedlings to about 6" apart during growth. (Use thinnings for salads.) To harvest cut leaves as desired and leave remaining leaves to mature on the plant for future harvests. For Best Results: Arugula tastes best when the leaves are young, about 2-3" long. Cut individual leaves as needed. If flowers appear they are edible as well. For a Continuous Harvest: Sow new seeds every 2-3 weeks to enjoy a continuous harvest all season long.

Answer: There is no smell really, I took a good whiff at it and smell wood not varnish. . I love the one I bought.
Question: Is the arugula seed sprouts usda certified organic
Answer: Like any wood instrument it is best to be kept in a constant cool dry area out of the sun. The reeds must be moistened by soaking prior to playing. You may rub lightly with a cloth some walnut or almond oil (not vegetable oil because it goes rancid) on the outside but NEVER on the inside of the Duduk.
