Answer: It tastes like soy sauce. Maybe like a cross between Kikkoman and LaChoy. I like it and will definitely buy again. The gluten free aspect was a non issue for me.

Once soy sauce is brewed, I doubt there is any gluten of any consequence left if any left but I am not an expert.

That's what I've read; I'm buying it for the first time myself.
