Porterhouse with Improvised Red Wine and Mushroom Sauce from Sauces

Here is an example of a sauce made by first sauteing meat—any steak cut will work for this—and then deglazing the pan with shallots (which are allowed to toast for a few seconds) and red wine. Glace de viande is added and the sauce finished with parsley.

Directions

1. Season the porterhouse with salt and pepper and saute it in very hot butter or oil. When sauteed to the desired degree, remove the porterhouse and let it rest, lightly covered with foil.

2. Pour the fat out of the pan and stir in the shallots. Saute until any liquid released caramelizes on the bottom of the pan. Add the wine and glace de viande and adjust the consistency by reducing or thinning with stock. Be sure to simmer long enough to cook off the alcohol in the wine.

3. Whisk in the butter and then the parsley. Carve the steak and serve with the sauce and mushrooms.

Mini Chorizo and PERi-PERi Frittatas

Ingredients:

• 6 tbsp PERi-PERi sauce
• 6 medium eggs, beaten
• 1 red pepper sliced
• 1 red onion, sliced
• 1 tbsp olive oil
• 1/2 cup diced chorizo
• 1/2 cup frozen peas
• Small bunch of fresh parsley

Method:

1. Preheat oven to 325°f and preheat frying pan over a medium high heat.
2. Whisk the eggs with PERi-PERi sauce in a bowl.
3. Add oil to the pan and cook the chorizo for 3-4 minutes. Add red onion and pepper and cook for 5 minutes, then add peas and cook for another 2 minutes. Finish off by adding parsley.
4. Spoon the veg mix into the muffin tray, divide into 10 muffins, top with egg mix and place in the oven for 12-15 minutes.
5. Remove move from oven and divide into 5 containers. Refrigerate for up to 4 days and enjoy with salad.

Answer:	I'm not sure what the original sauce is. I've been buying this one for years, originally purchased at CostCo by my local CostCo stopped carrying it. It is the same sauce the company sells in smaller bottles at gourmet stores. So yummy.
