13 best miracle noodles
Miracle Noodles, also known as shirataki noodles, are a type of low-calorie, low-carb pasta substitute that has gained popularity in recent years. Here's what you need to know about miracle noodles:
Ingredients: Miracle noodles are made from the root of the konjac plant, specifically the konjac yam. The konjac root is ground into a flour and combined with water to form a gelatinous substance, which is then shaped into noodles. Because they are primarily composed of water and glucomannan, a type of dietary fiber, they are very low in calories and carbohydrates.
Appearance: Miracle noodles are translucent and have a gel-like texture. They come in various forms, including spaghetti, fettuccine, and rice shapes, and can be a suitable substitute for traditional pasta or rice in many dishes.
Caloric Content: One of the primary attractions of miracle noodles is their extremely low calorie content. They are virtually calorie-free, making them a popular choice for those looking to reduce their calorie intake and manage their weight.
Low-Carb: Miracle noodles are also low in carbohydrates, which makes them suitable for low-carb and ketogenic diets. They are a great option for individuals who are trying to control their carbohydrate intake.
Gluten-Free: Miracle noodles are naturally gluten-free, making them a safe choice for individuals with gluten sensitivities or those following a gluten-free diet.
Neutral Flavor: Miracle noodles have a neutral taste, which means they can take on the flavors of the sauces and ingredients they are cooked with. They are often used in a variety of savory and sweet dishes.
Preparation: To prepare miracle noodles for cooking, it's important to rinse them thoroughly and then parboil or dry roast them to remove excess moisture and improve their texture. Once prepared, they can be used in stir-fries, soups, salads, and other dishes.
Health Benefits: The high fiber content in miracle noodles may contribute to a feeling of fullness and can be beneficial for weight management and digestive health. However, it's essential to drink plenty of water when consuming them, as their high fiber content can be quite filling.
Availability: Miracle noodles are available in many grocery stores and online retailers. They are sold in both individual packs and bulk packages.
Caution: While miracle noodles have many advantages, some individuals may find their texture and odor unusual. It's a good idea to try them in various recipes to determine if they suit your taste preferences.
Miracle noodles are a unique and versatile food product that can be a helpful addition to a range of diets, especially for those seeking to reduce calorie and carbohydrate intake. They offer a low-calorie, low-carb alternative to traditional pasta and rice, making them a valuable pantry staple for many people.

User questions & answers
Question: | How many servings per package |
Answer: | It's about two but I have found that the serving sizes were too small to fill me up so I use the entire package, since it has virtually no calories, that way I get full with less sauce. I have a friend that has made Pad Thai with them and it was wonderful |
Question: | Are these noodles "Paleo Diet friendly?" I'm strict on my Paleo diet but would love some noodles now and again. Thank you |
Answer: | Yes. I'm on a ketogenic diet and eat them. They're zero carb, don't raise your blood sugar and are from a healthy plant. My dad is diabetic and when he checked his blood sugar after having these noodles his readings were fantastic, better than before he usually eats. I do a lot of paleo stuff for my ketogenic diet and if I were paleo I'd totally eat these noodles. I love them in noodle soups. |
Question: | how do you store them |
Answer: | I store them in the cupboard. I find when I use them, the best method is to rinse them, then put them in a dry fry pan and saute them until the liquid is about gone. By drying them out they are ready for whatever sauce you wish to put on them. They also are not slimey that way. |
Question: | What is the shelf life of any of these noodles |
Answer: | Shelf life is 1 year. A bit longer if they are refrigerated. Great for storing in the bunker in case of a zombie apocalypse along with Spam and Twinkies. lol |

User questions & answers
Question: | Has anyone tried cooking them with chicken in chicken broth as in chicken and noodles |
Answer: | Anybody who says tastes fishy is imagining things. They are made from shirataki mushrooms and are flavorless. You do need to rinse them for a few minutes to clear the smell of the juice they come in..that has a sort of a fishy scent but is alleviated by rinsing. These take on the flavor of what you cook. Great beef stroganoff, pasta primavera with shrimp or veggies and fetuccini sauce, tomato sauce. They really fill you up and are great fiber for you! LOVE them, just a different texture to get used to, but baked in casserole cannot tell difference from pasta. No gas and bloat like from pasta, and only like 30 cals insteads of 300! |
Question: | I love these noodles but when i open one bag of the fettuccine noodles they were complete mush. is this normal? i hated to waste a bagbut i couldn’t |
Answer: | Not sure what you meant by mush,, but they are wet and slimy. You rinse them a lot and put some sauce on them, and they are good. The smell is also bad when you open the bag, but once again, rinse them a lot! |
Question: | Since you have to rinse, cook, then dry can you do this the night before and store them in the refrigerator till the next day or two |
Answer: | I suppose you might cover them w a damp towel . I have simply rinsed, then poured boiling water or broth ( then add butter, or olive oil) over them and served on the side with soup , spagetti sauce or stew . They tend to disappear if I put them directly into my soup. I havent tried them with white sauce. |
Question: | I just received a box of 6 packs of angel hair pasta, should the packages be refriderated before cooking them |
Answer: | No that’s why this product is so great for travel. Just remember to rinse well and try to dry. Cook first in a heated pan no oils to steam out moisture. Enjoy great cold also for pasta salad. |

User questions & answers
Question: | is there soy in this product |
Answer: | I am allergic to soy and am glad to report there is NO soy in this product. However, the noodles you buy in the grocery stores are made from soy. Just be sure to let the noodles sit in whatever sauce you make for at least 10 minutes before you eat them. They alone have absolutely no taste. Hope this answers your question. Will be happy to answer any more if you have any. |
Question: | Are these noodles similar in texture to udon noodles |
Answer: | No they are not like udon noodles. They have a much rubbery/chewy texture. |
Question: | Where exactly is the kelp grown for this product? How does it rate on the testing for the pollutants off of the nuclear fall outs from Japan |
Answer: | After making these a part of my regular diet, I have grown enough tentacles that I've requested the product be renamed to fukushima noodles. |
Question: | I'm confused. If "these noodles are composed primarily of soluble fiber" why does the label state 0 Fiber |
Answer: | Not really sure. I do know the FDA ruled that if a serving of food is less that 5 calories, companies can label it as 0 calories. Same with sugar and carbs (less than 1g), so maybe fiber they can do the same. Konjac noodles are 97% water and 3% fiber, so that would be my guess.Good question, I never thought about it. I might email miracle noodles and see if I can get an answer.I did just go to their website and saw nutritional information. Carbs is labeled as " |

User questions & answers
Question: | what's the texture like |
Answer: | not good... completely different from the regular miracle noodles. according to the directions, you don't have to boil them, you can steep them in hot water. i tried this and they did not seem to get cooked. probably better off boiling them. these noodles are short and stiff, and after I prepared them according to the directions they remained somewhat hard/they did not fully soften. these noodles were a complete waste of money. |
Question: | Where are these noodles made |
Answer: | Hello, Kanten noodles are essentially seaweed noodles - they're made from a sea vegetable known as tengusa - which provide a high amount of fiber without the calories, gluten, soy or sugar. |
Question: | Are these keto-friendly |
Answer: | Yes they definitely are. My husband and I are doing Keto and we are glad we found them. |
Question: | Do these ones have the fishy smell that the other Shirataki have |
Answer: | I have tried konjac noodles which I bought at the local Asian market, and threw them out because they had a fishy smell. I bought these in the variety pack because people here claimed that the noodles have no fishy odor. All 3 Miracle products I tried have a fishy smell when opened, and I hate the smell of fish! The odor does go away after going through an elaborate ritual of draining, rinsing, boiling, draining, pan-heating, but it's disgusting to have to go through this process and smell the stench, which on the package is described as an "aroma". Those Florida businesspeople sure know how to lie to make money at all costs. |

Vietnamese Chicken Soup - a Miracle Noodle family favorite
1. In a 3 quart saucepan, bring chicken stock to a boil over medium-high heat. Add garlic, ginger and cardamom and let simmer for 10 minutes.
2. Drain the water out of the package, rinse the noodles in cool water for 10-15 seconds (the konjac plant aroma is normal and will go away fully in the next step). Put in boiling water for 2 minutes. Then dry the noodles by placing in a non-oiled pan on medium heat until dry. Divide noodles into two bowls.
3. Add chicken to stock and let cook for 5 minutes (until completely cooked).
4. Pour soup into bowls over the noodles. Divide bean sprouts between two soup bowls then top each serving with half the scallions and chili sauce.
5. Garnish bowls with a slice of lime and chopped cilantro.

In 2006, Jonathan Carp, MD was visiting a friend in Japan when she took him to a Buddhist-run vegetarian restaurant on the outskirts of the beautiful city of Kyoto. He was introduced to konnyaku in different shapes and in noodles called shirataki. After discovering the health benefits of this amazing plant-based food and the positive health implications for his patients, he started Miracle Noodle with his family. As Miracle Noodle received positive accolades from the likes of Dr. Oz, Rachael Ray, Rocco Dispirito and being featured in magazines like Cosmo, Men Health, and First for Women and TV shows like The View, ABC News, Hollywood Tonight - the company expanded and so did the product offerings. We now offer a line of products consistent with the health goals of our customers, making healthy eating easy and delicious. All of our products are non-gmo, vegan, and grain free with an ever expanding option of organic options as well.
- DIETARY FRIENDLY: Miracle Noodles and rice are approved for these special diets: Keto, Paleo, Certified Gluten-Free, Grain-Free, Soy-Free, Certified Vegan, Certified Kosher, and Blood Sugar-Friendly. Miracle Noodle products are made from quality, plant based ingredients, and may not be suitable for people with sensitivities to high-fiber foods

- ANCIENT RECIPE: Our noodles and rice are 97% water and 3% soluble plant fiber -- (plus mineral lime water to help the noodles keep their shape). It's the same way the Buddhist monks who developed these noodles made them over 1400 years ago!
User questions & answers
Question: | What kind of ingredients are in these ? Seem too good to be true |
Answer: | I don't have an answer to that question since I don't use these noodles anymore. A quick call to the manufacturer or search for videos online (there are lots of them) would be my first recommendation. |
Question: | Are these nade with konjac root |
Answer: | It’s nothing like regular. It has a slippery feel and tastes nothing like pasta |
Question: | Is there a full picture of the Nutrition Facts |
Answer: | Hello, Thank you for your question! You are correct in that the Green Labeled/Packaged version of this product are older versions. The newer versions are the Yellow Labeled/Packaged products and don't require boiling, only heat from the stove after placing it in a pan to heat it up. Thank you, Miracle Noodle team |
Question: | Texture is a little strange. Too firm. Would boiling it longer help or make it worse |
Answer: | Not spicy at all. It’s amazing and it doesn’t take much to get the flavor you need. Shake it well and marinade for a bit and enjoy!! |
