12 best salt packed anchovies
Salt-packed anchovies are a type of preserved fish that have been prepared and preserved in salt. They are a popular ingredient in Mediterranean cuisine and are known for their intense and savory flavor. Here is some information about salt-packed anchovies and their use in cooking:
Preparation: Salt-packed anchovies are typically made by layering fresh anchovies with coarse sea salt in wooden barrels or other containers. The salt acts as a preservative, drawing moisture out of the fish and creating an environment where harmful bacteria cannot thrive.
Flavor Profile: These anchovies have a strong, salty, and umami-rich flavor. They can be quite intense, so a little goes a long way in recipes.
Texture: The texture of salt-packed anchovies can vary depending on their age and how they are prepared. They can range from soft and tender to somewhat firm and chewy.
Uses in Cooking: Salt-packed anchovies are a versatile ingredient used in a variety of dishes, including salads, pasta, pizzas, and sauces. They can be mashed into a paste and used to add depth of flavor to soups, stews, and dressings. When incorporated into a recipe, they often dissolve into a savory, briny essence.
Storage: These anchovies have a long shelf life when stored properly. Keep them in their original salt packing or transfer to an airtight container, making sure they are fully covered with salt. Store them in a cool, dark place.
Rinsing and Soaking: Before using salt-packed anchovies in recipes, it's essential to rinse them thoroughly to remove excess salt. You can also soak them briefly in water, milk, or wine to further reduce their saltiness if needed. However, keep in mind that some recipes may rely on the anchovies' saltiness for seasoning, so adjust accordingly.
Alternative to Oil-Packed Anchovies: Salt-packed anchovies are a great alternative to oil-packed anchovies if you want to control the amount of oil in your dish or if you prefer a more intense anchovy flavor.
Culinary Companions: Salt-packed anchovies pair well with ingredients like garlic, lemon, capers, olives, and tomatoes. They are often used in classic dishes like Caesar salad dressing, puttanesca sauce, and tapenade.
In summary, salt-packed anchovies are a flavorful and long-lasting pantry staple used in Mediterranean and international cuisines to add a salty, umami punch to a wide range of dishes. Their intense flavor can transform ordinary recipes into extraordinary ones.

Agostino RECCA Whole Anchovies in Salt Imported Italian Anchovies Agostino Recca, from Sciacca, Sicily, has become one of the most reliable producers of anchovies now being imported into the United States. The Recca family is not a stranger to quality, flavor and tradition. These Recca Anchovies from Sicily are whole salted fillets packed in salt and a touch of brine. It is also important to note that these anchovies do require some extra work to remove the backbone and tail, but the extra work and time to soak the de-boned anchovies in cold water for 15-20 minutes before using, yields a flavor out of this world and we have actually found they are less salty than the oil packed anchovies. We recommend that once the can is opened, to keep the remainder of anchovies and salt in an airtight container in the refrigerator where they will keep indefinitely.

Long coveted by connoisseurs, anchovies packed in salt have a pure, intense flavor, undiluted by water or the flavors of oil. Once anchovies are harvested, they are packed in barrels and a layer of anchovies are packed in salt, which is then layered on with more anchovies. This stacking method builds pressure within the barrel and the salt preserves the small fish as it is absorbed into their flesh. These salt packed anchovies come to you direct from this curing process. No other liquids are added to draw off their distinctive flavor. To use these anchovies, simply soak them for 15-20 minutes in warm water, then lift out the spines and separate the two filets.

User questions & answers
Question: | Do these come in a tin can or plastic container |
Answer: | The package I received today is 10 oz. and contains 6 hot dogs. |
Question: | Are these anchovies from Italian waters |
Answer: | Nutrient values are always given per serving even if one serving happens to be the entire package. There are 6 hotdogs in the 10 oz package. Although I have seen some of the same product with 8 hotdogs in the package. |
Question: | How are these stored? Can you take out one at a time and save the rest for later? How long do they last after opening |
Answer: | Thanks for reaching out. We make all of our hot dogs with a cellulose casing that is removed prior to packaging. There is no casing on the product once it is packaged. Text us at 908-725-5800 if you have any further questions, we're here to help. |
Question: | can you post a picture of the new plastic container? What is the expiration date |
Answer: | I asked Applegate this a couple of years ago and I believe they said it is. A product should be labeled 100% grass fed or grass fed and grass finished to indicate it is fully grass fed. Saying just grass fed alone can mean finished on grain feed. My issue with this product is the massive amount of sodium in one hot dog. One is not very filling and if you eat two, you are over 1000 mg of sodium! |

Question: | what is 800 grams in ounces or pounds? Why don't you list the real weight so ordinary people can understand it |
Answer: | Covid-19. Sounds like price gouging. |
Question: | Is the head still attached |
Answer: | I bought these in 2016 and 2017, and neither batch included the heads. |
Question: | How long will they keep after opening |
Answer: | Transfer to a glass container (once open, the can may impart a "tinny" taste), keep the anchovies covered in salt. My last tin lasted more than a year. |
Question: | Did anybody try to fry these? I love fried anchovies, a cheap delicious snack in Europe, but not that easy to find in U.S |
Answer: | I have never actually counted the number but the container stipulates that 75 percent of the 800 gram weight is actual fish and the rest is the salt they are packed in. If I were to guess based on our consumption..I would say there are approximately 45 anchovies. Each time my wife prepares a batch in olive oil and hot peppers ..there are at least 12-15 anchovies. She makes at least three batches from each can. Keep in mind that these are bigger than the De-boned anchovies you see in the small glass jar in the super market. Hope this information is helpful. |

Answer: | Yes, the anchovies are from Sicily, Italy. |
Question: | What are the ingredients (ingredient list |
Answer: | They’re stored in the refrigerator after opening. Of course, just take out the amount you want to use. The rest is good for indefinitely, salt is very effective as preservative. |
Question: | Where is it produced (country of origin |
Answer: | The plastic container is alright, but I transfer them right away into smaller glass containers, like a few mason jars, for easy of access. Plenty of salt in there to layer below and on top. Make sure you store in fridge, and rinse before use. Slat can be used as an umami flavor enhancer in cooking. |

- Contains 3 x Brown Anchovies in a Small Glass Jar
- Net Weight = 3.3oz (per jar)
- Drained Weight = 1.9oz (per jar)
User questions & answers
Question: | what is the expiration date on these |
Answer: | 800 grams is about 1.75 lbs. I presume the weight is in grams because this is a European product, imported from Italy, and grams and kilograms are the standard ("real") weight used in the EU. |
Question: | What is the expiration date as the ones i previously purchased are 7 31 19. Thank you |
Answer: | No. The head has been removed |
Question: | How long will these be good stored in the fridge after opening |
Answer: | Refrigerated temperatures are a required once the anchovies have been exposed to air. Keeping the filets in brine and using plastic wrap to cover the tin will get you about 30 days of quality storage after opening. To get the maximum >2 month shelf-life I would recommend putting the anchovies in a storage container (tupperware) and adding slightly more water and salt to prevent them from drying out. |
Question: | What are the ingredients |
Answer: | I didn't try it, but I'm afraid you would be disappointed. The ones you got in Europe would have been fried when they were fresh (and raw). These guys have been packed in salt and are not very similar to "fresh fish". I don't think the flavor would be what you want, even if they didn't fall apart. |

Process
During the whole process we use 206° F (93° C) hot geyser water from the hot springs of Reykjanes, where we use it in the preheating, boiling and drying process of our salt. Geothermal energy is the sole energy source used, which means that during our whole process we leave zero carbon footprints on the environment and no CO2 and CH4 emissions.
Harvest
We pump the seawater to open pans where we preheat it until it becomes a strong brine, a salinity level of 17-20%. Then we boil the brine until white crystals appear on the surface and slowly fall to the bottom of the pan. Afterward we draw the pan and drain any remaining liquid. Then it is dried and put into packaging.
Crystals
Saltverk is one of the few entirely sustainable flaky sea salt producers in the world. The flaky sea salt is handmade pyramid-like crystal salt flakes that contain the flavor and taste of the Nordic region from which the raw materials used in it are derived.
Product
Saltverk Sea Salt includes minerals necessary for the human body and embodies calmness reminiscent of the location of its tranquil production surroundings. It is used in many of the best restaurants and in the homes of food enthusiasts around the world.
