Question: What are the ingredients
Answer: Cooked grape must and wine vinegar. It has a sweet taste but no sugar is added; the grapes themselves are the sweetness, I think. You will love this balsamic vinegar and will want to keep it on the table to use on many things. I have found that if I keep it in a dark place, away from the heat, I forget about it, so it stays on my marble pastry slab to keep it cool in our southern climate.

Answer: I do not refrigerate mine. I have had several bottles, and have never refrigerated them. It is the best Balsamic!
Question: can anybody compare this to other 18 year aged balsamics? A lot of the young stuff is barely dense
Answer: This is not aged18 years, but is good. You'll have to try a few pricer brands or go to a DOP to get much better, althugh tastes vary of course. Botte Piccola is similar but less tangy, Mussini Reserva di Famiglia is a step up to 14 years ages but is only 100 ml, not 250. Mia Bella is not in the same class, it's more food-grade. Hope this helps.
Question: Why do i not see the mandatory accredidation "aceto balsamico tradizionale di modena" printed on the label if it is the real thing
Answer: Perhaps you are referring to the DOP accreditation (Denominazione di Origine Protetta) rather than the words in your question. DOP certified balsamic vinegar production is subject to oversight be the DOP consortium. The balsamic can only contain grape must and nothing else - no wine vinegar, no sugar, no caramel coloring ... nothing. It has to be aged for a minimum of 12 years, and comes in a specifically shaped bottle which the produce has to buy from the consortium. It will also cost you 2-3x more than this depending on the source. I have a couple of bottles of the DOP and it is truly amazing balsamic, but at about $100 for a small 3.5 ounce bottle I use it sparingly and probably wouldn't put it on a salad. I've not tried this particular balsamic, but from the reviews, it looks like a good balsamic for salads and many other uses.

Recipe Suggestion - Fresh Truffle Pasta

Step 1: Using a fine cheese grater, grate two thirds of the fresh Truffles into a mixing bowl and add the butter and olive oil. Mix thoroughly and heat gently in a large flat bottomed pan until the butter is liquid.

Step 2: Grate the cheese with the same grater (to ensure none of the fresh Truffles are wasted) and set aside.

Step 3: Bring a small saucepan of salted water to the boil and cook the pasta until al dente.

Drain the pasta, then put the pasta into the pan with the grated truffles. Add the grated cheese and truffle oil and mix through gently.

Step 4: Plate up the pasta, bring to the table, and for the grand finale, shave the remaining fresh Truffles at the table over each plate of pasta.

In fact, given the barrel aging process employed by traditional producers it would be impossible to give a precise age since older vinegars are topped up each year from a barrel which holds a vintage that is one year younger.Goccia Oro is a premium balsamic vinegar with a viscosity of 1.33 compared to grocery store varieties of 1.04. As such, it has a higher percentage of wine must to wine vinegar and pours like a syrup.Sadly, there are many deceptive labels and claims when it comes to olive oil and balsamic vinegar. Realistically, the only thing you can do is to insure there is an IGP seal and tilt the bottle to see how viscous it is. The more syrupy it is often helps separate quality balsamic from pretenders.

The Traditional Balsamic Vinegar di Modena is aged for at least 25 years and is unique from all other vinegar-based condiments. Unlike ordinary vinegar which has its origins in an alcoholic liquid, balsamic vinegar is produced directly from grape juice. This vinegar’s therapeutic properties have now been confirmed by its high content of mineral salts and sugars.

The grapes are harvested in the same region in which this balsamic vinegar is produced, crushed and its liquid must be boiled in an open vat over a fire. This liquid is then placed in high-quality wooden barrels in which through an oxidation process is transformed into vinegar. The barrels are kept in a vinegar loft “acataia” where inside is lovingly cared for through a special technique involving transfers and topping up. Over many years micro biotic and enzymatic modifications unite to achieve an exceptional balance in flagrance and flavor.
