| Answer: | It should come in at about 13%, and very tasty, however you can control this. Today’s market chards are a bit clean & crisp for my liking. I enjoy a big butterball, oaky style like they made in the 70’s & 80’s. If u do also, add 32 oz of honey steaming water on the stove. When dissolved let cool a bit and add at the very beginning, before adding water to get to the 6 gal level. Add more oak again while aging, till ready to bottle. Use an infusion tube or oak sticks and remove a day or 2 before bottling to let the wine settle any sediment you kicked up. Hard not to drink right after bottling, but really kicks after 3 months. |
