Instructions:
For Dry Ribs:
- Coat both sides of ribs evenly. Cover and marinate 4 to 8 hours in refrigerator.
- Cook in covered dish in oven at 300˚ for 3 hours. Uncover, coat top of ribs with additional rub and let cook for 1 more hour.
- For WET Ribs: During last hour coat with favorite flavor of Bone Suckin' Sauce.
- On GRILL: Same as above, but wrap in foil for first 3 hours and open foil during last hour.

- Score back of rack in crisscross pattern, using sharp knife.
- Optional* Cover rack of lamb with honey and fresh garlic.

Answer: | I wouldn't call it hot, but definitely spicy. I like to make my own rub, including a fair amount of brown sugar (like most rubs), but bought a bottle of this at Sam's Club (who doesn't sell it anymore, it seems) just so that I'd have a backup for times when I might run out of my own, but might be short on time to whip up a new batch. This rub has no sugar and no flour, both of which would weaken the flavor. When I first started using this, I missed the sweetness of my own rub (though you could add your own sugar, I didn't), but the flavor grew on me. Just a light sprinkling adds a good amount of flavor to whatever you use it on. Use more if you like spicier. |

Hog waller bbq rubs are super sweet with a slight kick of heat from chipotle and cayenne peppers. This is our #1 selling bbq rub. Hog waller was originally made for pork ribs, but we soon learned that it was great for all types of pork. In fact it is great on all bbq meats. It has three types of sugar and a somewhat smoky flavor from the chipotle powder. The rubs work well for competition bbq cooks, where is generally used on ribs and also works well for back yard bbq. Many customers use it on grilled/smoked chicken. As we like to say, "use it on everything but the squeal ".
