I put a month's worth of whest in a vacuum freezer bag, vacuum seal it with an Amazon oxygen absorber pack, to keep it from going rancid (from the natural oils in the berries) AND a moisture absorber, to help it stay dry. Alternatively, use a small piece of cloth or a pouch of UNTREATED (no oil coating on the steel wool to reduce rusting) FINE 000 gauge steel wool inside the bag, will help remove the moisture (by rusting) & remove oxygen too, (by rusting as well). I remove the cloth pouch of steel wool when I unsealed the bag, and discard it, after inspecting it to see how much oxygen and moisture it "absorbed" by rusting. COOL, DARK, NO AIR, AND DRY, and your wheat berries can last for over a decade. I've heard of people keeping unground grains for decades this way. |

Answer: | I have ordered this monthly for YEARS. I am AMAZED that the cases of 12 packages to a case do not arrive broken more than they do. About every 4-5 months I get boxes where there are enough cracked individual packages (they put next to NO padding in the box and the boxes are too large) that I ask for a replacement or refund. I have pleaded with them and sent photos of how there is little to no padding for protection inside the box. These are fragile crackers! They still pack them very poorly and I am amazed each time an order arrives with no damage to the product. I LOVE these, but Amazon does a crappy job of packing them for shipping. |

Answer: | There aren't very many growers of Kamut. I believe most, if not all Kamut grain are grown in Montana, USA. In response to Stewart Allen's claim that it doesn't rise, that is false. I just made 3 loaves. It rode beautifully as I proofed it a few times. It doubled in size in my glass pans but lacked oven spring because I didn't shape the loaves right, but they did rise. This was my first time making whole grain Kamut bread. It wasn't the white, but I think the white would rise more readily. You can't treat Kamut flour the same as all purpose flour. Add less flour.
