Answer: According to an episode of "Japanese style Originator" that can be seen on Netflix it is best to break down the bag into serving sizes, i.e the amount you would cook at one time put it in a sealed bag to keep out air (so vacuum sealed bag probably be best) keep it in you refrigerator probably in the veggie section. That episode also shows how to properly prep the rice for cooking as well. Keeping the rice in a bucket under the sink is not a good method according to the show it may allow mold or bugs to occur in the rice. Nozomi is really expensive rice so it pays to take care of it and you will be rewarded.
