Answer: I eat this buckwheat as cereal with steel cut oats every morning. I have not tried making pure buckwheat cereal, but I think it would be ok, it depends on how well you like buckwheat. My recipe for my mixture is 1 cup steel cut oats, 1/2 cup buckwheat, a handful of roasted unsalted sunflower kernels, and a handful of raisins for sweetness. 5 cups of water and bring to a good boil, then reduce heat and simmer for 30 minutes, stir occasionally scraping the bottom of the pot. Put the extra in a tupperware and stick in the fridge and microwave it later.

Step 1

Heat 2 Tbsps of olive oil and 2 Tbsps of unsalted butter in a large heavy saucepan. Add 3 Tbsps of minced shallots and 2 cloves of minced garlic and saute over medium heat until shallots are tender, about 2 minutes. Add 1 1/2 cups of RiceSelect Arborio rice and stir until all grains are coated and slightly translucent, about 2 minutes.

Step 2

Add 1/2 cup of dry white wine and stir over medium high heat until all wine is absorbed. Add about 1 cup of hot broth to rice and stir constantly until almost all the broth is absorbed. Continue to add 4 cups of hot broth, one cup at a time, stirring until liquid is absorbed, before adding more broth.

Step 3

Use enough broth to cook the rice until it is just al dente. Remove from heat and stir in 1/2 cup of grated Parmigiano-Reggiano cheese.

Preheat the oven to 350° F. Grease bottom and sides of a 9 or 10-inch cake pan; sprinkle with sugar to coat.

In bowl, whisk together the eggs, sugar, rum, zest, vanilla, and a pinch of salt until combined; add the warmed milk, half & half and the cooked rice.

Pour custard into the prepared pan. The rice should settle evenly along the bottom.

Bake at 350° F for about 50 to 60 minutes, or until the top is golden brown and firm.

Remove from oven and let cool in the pan.

Serve cold or at room temperature.
