Answer: | Honey does not need to be organic, but it definitely needs to be raw (unheated). Bees are very sensitive to pesticides and they wouldn't go near a flower or plant that has been treated with pesticides (I come from a beekeeper family of over 7 generations). In fact the smallest amount of the pesticide would kill the bees, so there is no way honey with pesticide in it would make it to the hive. Bees would be dead way before it reaches the hive. But do not buy the garbage that the stores sell. It is literally no better than processed sugar, maybe even worst. Always, always buy "RAW" honey. If raw and in moderation should be good for health. Taste wise raw sage is great and light, orange blossom is flavorful but great taste, star thistle distinctive aromatic and tasteful also. As far as best for health (in general not specific conditions) is mountain honey ideally cultivated/collected mid to late summer (i.e. dry season). Of course Raw Manuka honey is best but I don't thing quality and health benefits justifies a 10/1 price ratio to other raw honey. For example it is my opinion that RAW wild mountain flower honey from dry areas(i.e. Arizona, California, Nevada) is nearly as good health wise as Manuka honey yet at 10-20% of the price. |

Answer: | I used to keep bees but due to where I live and physical limitations I can no longer do so, that said when I had bees I "filtered" all my honey. By filtering I run it through several different sizes of mesh strainers. My basic honey collection process was I would remove the full "honey supers" (box places in a "Langstom" style beehive filled with frames of comb for bees to store honey) and replace them with empty ones) The full honey supers were taken to my bee shed where I would check honey from each frame to ensure it was "dry" enough for bottling. Honey not dry enough was normally feed back to my bees or sometimes collected and given to family members to use in a couple of weeks or for baking. I digress the "dry" capped honey comb was then uncapped and spun as the honey poured out of the spinner into a bucket it pass though a fairly course set of sieves (3/8", 5/16" to quickly remove pieces of cap wax, dead bees or bee parts and other things that were not honey. The buckets I used to collect honey in at this stage were 6 gallon food safe plastic buckets with a "honey gate" installed on them. After all the fames of comb were spun I would collect all the comb caps, and honey comb that I was not going to reuse and press them to remove any honey and to prepare the wax for melting and cleaning. The honey collected from squeezing also was filter/strained for the first time as well. The freshly collected honey was allowed to set in my "hot room" (I had a large insulated closet in my bee shed that I keep at 90 to 100 degrees F so that when I processed my honey it would remain viscous and pourable) The honey would stay in the hot room for 3 or 4 days to settle any smaller FOB (Foreign Objects) out (anything that is not honey) using another set of smaller strainers (1/4", 5/32", 1/10", and 3/32") this set of strainers was made out of stainless steel and wrapped with heat tape that was keep them at 95-98 degrees. The "Filtered" (strained) honey was poured into more 6 gallon food grade buckets and was either bottled or sold in bulk to my local honey cooperative. Myself I took care never to let the comb or honey go above 100 degrees F once I removed it from my hives and trusted my bees to keep the honey in good shape while in my hives. Additionally I never sold honey directly from hive "cut-outs" or "dead-outs" that honey was either consumed by friends and family or feed back to my bees usually at times of dearth or before winter as food. The reason for me writing this is to try and clear up confusion about the general use of the term filtering in the bee industry and how raw honey can heated (it is considered an acceptable industry practice to heat/warm honey up to 105 F and for it still be raw once honey is heated past that point many of the good enzymes and other benefits of honey can be altered not for the better or destroyed. Personally I only buy honey from framers markets when I can or from honey from US or Canadian bee keepers preferably US and as local to me as possible. My reasoning for US/Canadian honey say as opposed to honey from South America is because I have no idea how hot the honey got while being shipped from South America but I can guess it got well above 105 for a extended period of time in a shipping container either at the docks or while at sea, second is agricultural standards in the US and Canada are generally better than South America and other parts of world. As for my preference of buying honeys that are produced near me means I am eating closer to home which when it comes to honey means the bees are eating the pollens that are in my general area and I believe that helps with my pollen allergies which when I was keeping bees were almost a non issue |

I forgot to mention the obvious in my initial answer to this question: both caps on two bottles that I just received WERE BROKEN, and one (broken) cap was barely on. One source says, "Before carrying out any of tests, one basic and extremely simple “how to check the purity of honey” method is to read the label on the jar of honey, prior to its purchase. Manufacturers are required to mention the additives and additional substances that have been added to the produced honey." That source goes on to say, "Different types of pure honey can cover a large range of density, flammability, and other characteristics. While the following tests are based on true principles, in practice your results may be inconclusive." THUMB TEST Here’s the procedure to do a thumb test: Put a small drop of the honey you have on your thumb Check to see if it spills or spreads around If it does, it is not pure Pure honey will stay intact on your thumb WATER TEST: Fill a glass with water Add one tablespoon of honey into the glass Adulterated or artificial honey will dissolve in water and you will see it around the glass Pure honey on the other hand will settle right at the bottom of your glass DILUTED WITH WATER TEST: Drop honey on blotting paper or a paper towel If honey has been diluted with water, it may be absorbed or leave a wet mark on an absorbent material such as blotting paper. Pure honey should not be absorbed, but unfortunately, neither will honey diluted with most sugar syrups. ANOTHER WATER DILUTED TEST: Dip cotton in honey and light it up with a matchstick. If the honey is pure, it will burn. Adulterated honey will produce a cracking sound due to the presence of water in it. |

- Creamed honey is honey that has been processed to control crystallization. The process is often used in colder climates and involves heating the honey. We do not cream our honey as we do not use heat, which damages the enzymes.
- Only purchase manuka honey that includes the letters “MGO”, "NPA" or “UMF” along with the rating number, to be sure of their certified potency.
- MGO: According to Wikipedia, Methylglyoxal (MGO)....appears to have activity against E. coli and S. aureus and may help prevent formation of biofilms formed by P. aeruginosa.
- Honey does not need to be stored in the fridge, even after opening!
