Answer: | yes. just use as called for in the recipe. double-acting baking powder is said to be more reliable than single-acting for home baking. but weather a recipe calls for double-acting or single acting baking powder, use the same amount (and as a sidenote if you're doubling a baking recipe be careful and don't double baking powder unless the recipe says it can be doubled, as you might get bitter dough). I have read that there might be a difference between baking powders with aluminum and without if you're letting the dough sit around before baking (don't know how long it would have to be) but I myself haven't noticed a difference whether i bake right away or not (i.e.: claims of less dough rise in the oven with aluminum free baking powder). |

Batters and dough are essentially foams made up of thousands of tiny air pockets, which become a solid structure when baked. Chemical and biological leaveners create these bubbles.
