Bob's journey began in the mid '60s after coming across a book about an old stone-grinding flour mill. I put just one tablespoon in a loaf of bread; I use 1 1/2 cup Ultra-Grain Flour (from Costco), 1 cup of stone ground whole wheat flour, and 1/2 cup of wheat bran for my regular bread. Works great. The rest of my recipe is 1 1/4 c warm water, 2 tbsp olive oil, 2 tbsp honey, and 1 1/2 tsp dry yeast. Mix it in my bread machine on dough setting; then bake it in a regular bread pan in the oven -- don't like the shape of the bread machine product cause it doesn't fit the toaster and we eat of lot of it as toast. I think one or two tbsp of that form of gluten is plenty. You can vary the amount depending on how it works with the types of flour you are using. Good Luck.
