Answer: The bottles labled Destination Series, and harvested in the 2017-2018 harvest season are not from 100% California grown olives. The label on the basic bottle you can find in stores now says Destination Series and says the olives are sourced from growers in California, Argentina, Chile, and Portugal, then refined and bottled in California. It does NOT have the California Olive Oil Council seal. It does have a seal in place of that saying it is certified Extra Virgin Olive Oil. I have an older bottle on hand from the 2015 harvest. The label says it uses 100% California grown olives and it has the California Olive Oil Council seal. This is the one Cooks Illustrated recommended where they explained olive sourcing and why it is better to buy from companies that bottle close to and soon after harvest. Many loyal customers, as you can see in the reviews, are upset about this, thinking California Olive Ranch betrayed them. They have been buying for a while and probably didn't look closely at the label. I can't blame them for feeling baited and switched. If this disappoints you, as it did me, wait for the next harvest before dismissing California Olive Ranch entirely. I have no affiliation or insider knowledge but I believe this is only a temporary change due to a bad harvest. In fact, the company's CEO is on record in the NY Times as saying the 2018 California olive harvest was a disaster for growers due to the unseasonably cold winter (elsewhere, it was reported it sent CA olive oil manufactures scrambling to find olives to stay afloat and meet demand) and that they had established partnerships with other countries a few years ago in case of this very situation. He also said at least 26% of the oil in each Destination Series bottle is from California. It was also in the news late last year that California Olive Ranch is expanding their plantings by 2000 acres, which should help mitigate less productive years.

Answer: Don't know about the fridge, but I have kept mine in large glass jars for months on my counter. I drain off the brine and make up another solution using organic EVOO, hot, whole, small peppers (for a little kick), and the olives marinate, the longer the better. I'll give some away in small jars as hostess gifts, serve as hoerderves, snack on them, whatever. For me, the olives hold up well and stay firm. That large can filled up a gallon size Ball jar and a 1/2 gal one at the same time. It makes quite an impressive display while marinating. I've kept them out on the counter for about 3 1/2 months. Delicious! Have not just opened them and placed in the fridge.

Answer: When you buy a tin of olive oil you need to make a hole with a nail at the other opposite end of the opening of the spigot. This helps the breathing of the can when pouring in to an olive oil canister. make sure to cover the nail hole with the same nail as to not permit any critters to fall in. Your problems will be solved.

Answer: C60 does not "dissolve". If it could be dissolved, it would no longer be C60. C60 is a soccer ball shaped carbon molecule, also known as buckminsterfullerine. Fullerines occur in many natural processes, usually involving high heat levels, such as the burning of wood or paper. So fullerines are soot. Soot cannot be "dissolved", but it can be diluted or suspended in fluids. Nano particles made out of anything can be diluted or suspended in fluids.

Answer: The saturation limit for carbon-60 dissolved in olive oil is between 0.8 to 0.9 grams of C-60 in one liter of oil, so the amount of C-60 in the oil will be 0.08 to 0.09 grams per 100ml bottle. Typically, the manufacturer of the oil will start with a greater quantity of C-60 powder (for example, 5 grams per liter) in order to guarantee that as much C-60 as possible is dissolved in the oil. After two weeks of stirring they will end up with an oil that has the 0.8 to 0.9 grams per liter dissolved, and roughly 4.2 to 4.1 grams of undissolved C-60. Answer: I have bought their oil for several years so the harvest date on that box doesn’t mean anything. I always wanted to know the harvest date before purchasing so I would email the company to let me know the date of the next harvest, if it was close. It is fall, so it is pretty easy to guess. Also, I have bought the fresh oil before the 40 day (I think) settling period so you know that is the latest oil when it appears on their website. They are very good about responding to emails so it is easy to contact them about harvest dates.

Answer: I use this tin also. What I do is, after pouring, before standing the tin upright I have a paper towel handy and wipe the excess. This prevents the residual oil from running all over the top of the tin. I will then use a damp paper towel to clean further.
Question: How long is the shelf life
Answer: Current Inventory has a shelf life of more than 18 months. But this changes all the time as we receive new inventory or sell thru.
Question: Is this organic
Answer: While not officially organic, my experience with similar products indicates that some European companies refrain from the expense and process of obtaining a certified organic product. Specifically, a few small business owners have mentioned that the certification only verifies that at least 70% of the product is organic; meaning, the remaining 30% is potentially unknown as to its quality. Possibly inquiring to the company directly about its harvesting techniques, pesticide usage, etc. can provide some enlightenment.

Answer: I don't know for sure, but I doubt it would curdle milk. These are highly concentrated natural oils. This would be a good question for Boyajian.

Answer: The only statement that I see is that it is "pure and natural " I did not notice any reference to organic.

Answer: I've never had a problem with it, however I assume that it could go rancid since it is an oil. For that reason, I keep my citrus oil (lemon, lime & orange) in the refrigerator.

Answer: Yes, I use this daily on my beard, 1-2 sprays in my hand and work it in after my shower to keep my hair and skin from drying out.

Answer: I use it as a detangler for my 3 & 5 yr old girls. They do not have braids. They have a lot of hair, fine, curly. This product keeps their hair from damage from brushing. It may be too oily for fine straight hair.

Grilled Salmon with Grilled Pepper & Corn Salsa

Ingredients:

Salsa:

¼ cup Filippo Berio Olive Oil.

3 cloves garlic.

1 tbsp seeded minced jalapeño pepper.

4 sweet red peppers, diced.

4 cups fresh corn (cut from 5 cobs).

1 can black beans, rinsed and drained.

2 tbsp fresh lemon juice.

2 tbsp fresh lime juice.

2 tbsp chopped fresh cilantro.

Salmon:

10 salmon fillets (about 6 oz each).

Kosher salt.

Freshly ground pepper.

¼ cup Filippo Berio Olive Oil.

2 tbsp honey.

1 tbsp cumin.

Directions:

Salsa:

Heat olive oil in large cast-iron pan set over medium heat; stir in garlic and jalapeño pepper. Stir in red peppers and corn; cook until corn browns slightly. Toss with beans, lemon juice, lime juice and cilantro; set aside.

Salmon:

Season both sides of salmon with salt and pepper. Whisk together olive oil, honey and cumin; place salmon in shallow pan and pour olive oil mixture over top. Refrigerate, turning once, for 30 minutes.

Place salmon skin-side up on greased grill over medium heat; close lid and grill for 5 to 6 minutes per side. Serve fish on platter topped with salsa.

Prep Time: 40 minutes.

Cook Time: 10 minutes.

Total Time: 50 minutes.

Serves: 10.

Rigatoni with Italian Sausage & Broccoli Rabe

Ingredients:

1 lb rigatoni pasta.

¼ cup Filippo Berio Olive Oil.

4 garlic cloves, sliced.

3 sweet Italian sausages.

3 hot Italian sausages.

1 lb broccoli rabe, trimmed.

½ cup dry white wine.

1 cup chicken stock.

Kosher salt and red pepper flakes.

¼ cup grated Parmesan cheese.

Directions:

In large pot of boiling salted water, cook rigatoni pasta according to package directions. Drain; set aside and keep warm.

Heat olive oil in large, heavy skillet set over medium heat; cook garlic for 1 minute or until slightly browned. Add sausages; brown well. Transfer sausages to plate; keep warm. Add broccoli rabe to skillet; stir in white wine, scraping up any browned bits on the bottom of skillet. Pour in chicken stock; cover and cook for about 20 minutes or until broccoli rabe is tender.

Return sausages to skillet and remove from heat; season with salt and red pepper flakes. Add rigatoni to skillet; toss well. Top with Parmesan cheese. Serve immediately.

Prep Time: 15 minutes.

Cook Time: 30 minutes.

Total Time: 45 hours.

Serves: 4-6.

Ingredients:

1 tbsp Filippo Berio Olive Oil.

1 onion, diced.

4 cups beef broth.

1 cup dried lentils, rinsed and drained.

¼ cup tomato sauce.

1 tsp dried Italian seasoning.

Salt and freshly ground pepper.

Directions:

Heat olive oil in large saucepan set over medium heat; cook onion, stirring occasionally, for 5 minutes or until softened. Add beef broth; bring mixture to boil. Stir in lentils, tomato sauce and Italian seasoning. Cover; reduce heat to low and simmer for 45 minutes or until lentils are tender. Season with salt and pepper to taste.

Prep Time: 5 minutes.

Cook Time: 50 minutes.

Total Time: 55 minutes.

Serves: 6.
