The Fattoria Bini is located nearby Empoli, in the Chianti area, between Florence and Pisa in the heart of Tuscany, a natural and historical environment. It has been passed from generation to generation, and today it is led by Elena and Francesca Bini Moriani, who continue, year after year, in their meticulous work of restoration and modernization. The historical site of the farm, today family residence, is the Villa Terraio, a five hundred years old villa, with a beautiful Italian style garden. The Villa, located in the Florentine hills, is surrounded by the vineyards and olive groves of the Fattoria Bini and accompanied by Borgo San Giusto, hospitality venue also ideal for meetings, shows, and private receptions. The Villa Terraio is surrounded by a beautiful forest, consisting mainly of tall oak trees, where you can often see rare birds of prey flying undisturbed.
In the mid-nineties, the Bini Family started a significant reforestation intervention. Since then, more than 15,000 trees (including walnuts, oaks, ash trees and cypresses) have been planted over 50 hectares, allowing the regeneration of the original rural environment. Today it is possible to see deer wandering in the woods. The origins and history of the Fattoria Bini are connected to the history of the Grand Dukedom of Tuscany. In the historical period from Pietro Leopoldo to Leopoldo II of Lorraine, 1765-1790, the Bini Family, originally from Livorno, began to focus on agriculture. Mariano, a wine merchant, moved to Empoli in 1789 to buy a small farm and adopt the latest cultivation techniques from Cosimo Ridolfi. The purchase of the Villa Terraio and surrounding farms date back to 1880. The Villa was the residence of the historic Florentine family De’Cerchi in the early sixteenth century.

Answer: | All Entimio olive oil is filtered with paper filters allowed under USDA organic certification. This "natural" filtration method is a relatively expensive process and has the purpose of reducing water content and solid residues to ensure shelf stability and maximum health benefits for consumers. I know that other sellers promote "unfiltered" olive oil as more natural and healthier. Unfortunately, that is not true, and all olive oil experts agree on this matter. Also, for maximum transparency and safety, we test all our Entimio olive oils after bottling. By doing so, we are sure that all values (polyphenols level, free acidity, absence of pesticides and resides, etc.) reported on our listings relate to the same product you will get at your home, after filtering and bottling. And if you still want to experience unfiltered olive oil, you should do so during harvest at the producer site or at least within three, max six, months from harvest. The higher water content and solid residues present in unfiltered olive oil contribute to significantly faster oxidation and reduction in the antioxidants content of any olive oil. Answer: | Yes, this Entimio Intenso EVOO has a nice peppery and slightly bitter note, balanced while pronounced, as to be expected in a robust EVOO and as typical of the "Correggiolo" olive variety cultivated in the Chianti Classico area. The peppery (aka pungent) and bitter notes are the natural expressions of polyphenols (natural antioxidants present in high-quality olive oils) and a distinctive sign of early harvest well-milled olive oils. Please see our pairing suggestions in the pictures and product details, but also experiment as taste is subject and there is no right or wrong answer. Answer: | Hi, as far as I am aware, the FDA does NOT allow a health claim on the potential benefit from the consumption of olive oil with high phenolic content. The only "qualified health claim" allowed by the FDA on olive oil, which applies to all vegetable oils with more than 70% of oleic acid, is the following "Supportive but not conclusive scientific evidence suggests that daily consumption of about 1½ tablespoons (20 grams) of oils containing high levels of oleic acid, when replaced for fats and oils higher in saturated fat, may reduce the risk of coronary heart disease. To achieve this possible benefit, oleic acid-containing oils should not increase the total number of calories you eat in a day. One serving of [x] oil provides [x] grams of oleic acid (which is [x] grams of monounsaturated fatty acid)." All Entimio olive oil has > 70% of oleic acid. However, we believe the above language is so complicated, generic, and "weak", that it may confuse more than promote the use of olive oil. Indeed, few brands, if any, have written this FDA "qualified health claim" language on their packaging. A phenol-related claim is instead allowed by the European equivalent of the FDA, the EFSA, for oil with more than 200mg/kg of phenols, which is what you may have read about. As per the FDA health claim, also in Europe, it is very rare to see health claims on olive oil bottle/packaging, because the language is complicated and "weak." The "European" phenols-related claim reads something like "Polyphenols from olive have an antioxidant activity that may help maintain healthy LDL cholesterol level and lipid oxidation/antioxidants. This health benefit can be enjoyed following the consumption of 20 g of olive oil with a polyphenol content of 200 mg/kg / Min 2 mg per day of hydroxytyrosol". We make our best effort to produce and market delicious and authentic olive of the highest quality, which for us also means olive oil with oleic acid and phenolic content among the highest on the market. However, given we are neither doctors or food scientists, we prefer to leave to health practitioners and consumers to decide what is best for their health. Answer: | All Entimio olive oil is filtered with paper filters allowed under USDA organic certification. This "natural" filtration method is a relatively expensive process and has the purpose of reducing water content and solid residues to ensure shelf stability and maximum health benefits for consumers. I know that other sellers promote "unfiltered" olive oil as more natural and healthier. Unfortunately, that is not true, and all olive oil experts agree on this matter. Also, for maximum transparency and safety, we test all our Entimio olive oils after bottling. By doing so, we are sure that all values (polyphenols level, free acidity, absence of pesticides and resides, etc.) reported on our listings relate to the same product you will get at your home, after filtering and bottling. And if you still want to experience unfiltered olive oil, you should do so during harvest at the producer site or at least within three, max six, months from harvest. The higher water content and solid residues present in unfiltered olive oil contribute to significantly faster oxidation and reduction in the antioxidants content of any olive oil. Answer: | Don't know about the fridge, but I have kept mine in large glass jars for months on my counter. I drain off the brine and make up another solution using organic EVOO, hot, whole, small peppers (for a little kick), and the olives marinate, the longer the better. I'll give some away in small jars as hostess gifts, serve as hoerderves, snack on them, whatever. For me, the olives hold up well and stay firm. That large can filled up a gallon size Ball jar and a 1/2 gal one at the same time. It makes quite an impressive display while marinating. I've kept them out on the counter for about 3 1/2 months. Delicious! Have not just opened them and placed in the fridge. |

The peppery (aka pungent) and bitter notes are the natural expressions of polyphenols (natural antioxidants present in high-quality olive oils) and a distinctive sign of early harvest well-milled olive oils. Answer: | Hi, as far as I am aware, the FDA does NOT allow a health claim on the potential benefit from the consumption of olive oil with high phenolic content. The only "qualified health claim" allowed by the FDA on olive oil, which applies to all vegetable oils with more than 70% of oleic acid, is the following "Supportive but not conclusive scientific evidence suggests that daily consumption of about 1½ tablespoons (20 grams) of oils containing high levels of oleic acid, when replaced for fats and oils higher in saturated fat, may reduce the risk of coronary heart disease. To achieve this possible benefit, oleic acid-containing oils should not increase the total number of calories you eat in a day. One serving of [x] oil provides [x] grams of oleic acid (which is [x] grams of monounsaturated fatty acid)." All Entimio olive oil has > 70% of oleic acid. However, we believe the above language is so complicated, generic, and "weak", that it may confuse more than promote the use of olive oil. Indeed, few brands, if any, have written this FDA "qualified health claim" language on their packaging. A phenol-related claim is instead allowed by the European equivalent of the FDA, the EFSA, for oil with more than 200mg/kg of phenols, which is what you may have read about. As per the FDA health claim, also in Europe, it is very rare to see health claims on olive oil bottle/packaging, because the language is complicated and "weak." The "European" phenols-related claim reads something like "Polyphenols from olive have an antioxidant activity that may help maintain healthy LDL cholesterol level and lipid oxidation/antioxidants. This health benefit can be enjoyed following the consumption of 20 g of olive oil with a polyphenol content of 200 mg/kg / Min 2 mg per day of hydroxytyrosol". We make our best effort to produce and market delicious and authentic olive of the highest quality, which for us also means olive oil with oleic acid and phenolic content among the highest on the market.
