13 best cinnamon for baking
Cinnamon is a popular spice used in baking and cooking to add a warm and sweet flavor to a variety of dishes, including cookies and baked goods. Here's what you need to know about using cinnamon for baking:
Flavor Profile: Cinnamon is known for its distinct sweet and spicy flavor, with a hint of warmth and earthiness. It's a versatile spice that can enhance the taste of both sweet and savory dishes.
Forms of Cinnamon: Cinnamon is available in two main forms: ground cinnamon and cinnamon sticks (also known as cinnamon quills). Ground cinnamon is commonly used in baking because it's easy to incorporate into recipes. Cinnamon sticks are often used for infusing flavor in liquids or for garnishing dishes.
Baking with Ground Cinnamon: Ground cinnamon is a key ingredient in many baking recipes. It's often used in cookies, cakes, muffins, bread, and pastries to impart a rich and aromatic flavor. When adding ground cinnamon to your baked goods, follow the recipe's measurements to achieve the desired taste.
Combining with Other Spices: Cinnamon pairs well with other baking spices like nutmeg, cloves, and allspice. These spices are often used together to create complex and aromatic flavors in baked goods, such as pumpkin pie spice blends.
Measuring Cinnamon: When measuring ground cinnamon, it's essential to use the correct amount specified in your recipe. Too much cinnamon can overpower the flavor of your baked goods, so it's best to be precise.
Freshness: Cinnamon, like other spices, can lose its flavor over time. To ensure your baked goods have the best taste, use fresh ground cinnamon and store it in an airtight container away from heat and light.
Cinnamon Sugar: Cinnamon sugar is a mixture of ground cinnamon and granulated sugar. It's often used as a topping for cinnamon rolls, toast, and other baked treats. You can easily make your own by combining the two ingredients to taste.
Cinnamon Sticks: Cinnamon sticks are sometimes used in baking to infuse liquids like milk or cream with cinnamon flavor. You can simmer them in a liquid and then strain them out before using the flavored liquid in your recipes.
Varieties of Cinnamon: There are different varieties of cinnamon, with "Ceylon cinnamon" (true cinnamon) and "Cassia cinnamon" being the most common. They have slightly different flavor profiles, with Ceylon cinnamon often considered to have a milder and sweeter taste.
In summary, cinnamon is a beloved spice in baking, known for its sweet and spicy flavor. It's a versatile ingredient used in a wide range of baked goods, and it can be ground or in stick form, depending on the recipe's requirements. Proper measurement and freshness are key to achieving the best results when using cinnamon for baking.

FREQUENTLY ASKED QUESTIONS
What is the difference between "regular" cinnamon and Ceylon Cinnamon? With our experience selling different types of cinnamon, folks often feel Ceylon has a much milder flavor than the pungent, spicy cinnamon taste we’ve grown used to. These types of cinnamon have up to 10x the oil content of Ceylon. It is this oil that delivers the characteristic taste and smell we associate with cinnamon. The benefit of Ceylon is that it has much lower coumarin content. People who wish to avoid high levels of coumarin for health reasons tend to use Ceylon over other forms of cinnamon.
Where does Ceylon Cinnamon come from? Sri Lanka. Our 100% raw Ceylon Cinnamon powder comes from Sri Lanka.
Do you add anything to your Ceylon Cinnamon? No! Our organic Ceylon Cinnamon is 100% raw with no additives.
Is your Ceylon Cinnamon Non-GMO? Yes!

KEY FEATURES: Simply Organic Ground Ceylon Cinnamon is potent, “true” cinnamon (Cinnamomum verum). It has a more complex, and yet more delicate, flavor profile than the more common cassia cinnamon. Its fruity and slightly sweet taste and warm, spicy aroma won us "BEST" Ceylon Cinnamon by Epicurious in 2018. Our Ceylon Cinnamon’s mild flavor is especially suited for finer desserts with subtle flavors that will allow this cinnamon to shine, such as a chai spiced crème brulee. It’s also ideal as a finishing spice, so add it to French toast and sprinkle it on your hot cocoa. Ceylon is the type of cinnamon traditionally used in Mexican cooking, where it's found in such diverse fare as chorizo sausage, rice pudding and beverages. This Ceylon cinnamon powder’s texture and flavor also make it a great spice to include in apple compote, ice cream, pancakes and crepes. This product is packaged in a clear glass jar, so you can see what you’re getting. Bottle and metal cap are fully recyclable — and reusable. SMALL FARMER PARTNERSHIPS: Simply Organic Ceylon Cinnamon is sourced from a long standing co-op partner in Sri Lanka, where we help select and develop the product. Close relationships with suppliers allow us to actively engage in sourcing for both our Ceylon and Vietnamese Cinnamons. (Ceylon and Vietnamese cinnamon are different botanicals with very different flavor profiles — so check out both of them!)
- ORGANIC CEYLON CINNAMON - Nothing but pure, organic, ground Ceylon cinnamon (Cinnamomum verum). No GMOs. No ETO (considered carcinogenic by the EPA). Not irradiated. Certified Organic by QAI. Kosher Certified by KSA. So good, it was voted "BEST" Ceylon Cinnamon by Epicurious in 2018.
- DELICIOUS AND VERSATILE - You want "true cinnamon"? This is it. You’ll know Ceylon by its complex yet nuanced flavor. Ours is spicy in the true sense — but, with its 1 to 1.6% oil content, the flavor is mild and delicate. Comfortingly warm, not hot. Fruity, almost apple-cinnamony, floral and nectar-like, but only lightly sweet. It’s that complex. Its aroma is equally distinctive, with hints of floral and citrus complementing the warm-spicy notes.
- PURE AND POTENT FLAVOR - Simply Organic believes in pure and potent flavor grown at the source. Our rigorous standards mean that we know precisely what you’re getting, and from where. All of our products are grown and processed without the use of toxic pesticides, irradiation, or GMOs.

User questions & answers
Question: | Kosher for passover |
Answer: | My packet says Ceylon. However, in my opinion it doesn't taste like what cinnamon is supposed to taste like. The one I usually buy from Costco tastes and smells 20 times better! |
Question: | Hi is this pure cinnamon? Thanks |
Answer: | Mine expire January 2021. The more I use these the more I love them. I put one in the cup when I step tea and it gives an amazing flavor!!! |
Question: | is this cinnamon Non-gmo |
Answer: | From the picture, the rolls have spaces between the layers, which means it is not the medicine, Ceylon cinnamon. Ceylon is soft and compacts into a cigar with no spaces. Do a google search to see the difference. For those that do not know, the other types of cinnamon have higher levels of coumarin, which causes liver damage. Ceylon cinnamon is lighter brown, softer, harder to find, and more expensive than other cinnamons. 90% of imported cinnamon is hard cinnamon. |
Question: | Cassia or ceylon cinnamon? Whix is best quality cinnamon? Thanks |
Answer: | "True" cinnamon aka Ceylon Cinnamon has very low coumarin levels and is only grown in Ceylon, which is modern day Sri Lanka. Cassia cinnamon has very high coumarin levels, which is bad for the liver in high quantities, and is grown many places around the world including Mexico and China. |

- Cinnamon is a spice that is made from the inner bark of trees scientifically known as Cinnamomum. It has been used as an ingredient throughout history, dating back as far as Ancient Egypt. It used to be rare and valuable and was regarded as a gift fit for kings.
- There are two main types of cinnamon: Ceylon cinnamon: Also known as "true" cinnamon. Cassia cinnamon: The more common variety today and what people generally refer to as "cinnamon."
- Cinnamon is made by cutting the stems of cinnamon trees. The inner bark is then extracted and the woody parts removed. When it dries, it forms strips that curl into rolls, called cinnamon sticks. These sticks can be ground to form cinnamon powder.
- Cinnamon is a popular spice. These days, cinnamon is cheap, available in every supermarket and found as an ingredient in various foods and recipes.
- Cinnamon is loaded with powerful antioxidants, such as polyphenols. In a study that compared the antioxidant activity of 26 spices, cinnamon wound up as the clear winner, even outranking "superfoods" like garlic and oregano. In fact, it is so powerful that cinnamon can be used as a natural food preservative.

Question: | Is it irradiated |
Answer: | No MSG. It is 100% onion; granulated. |
Question: | How much coumarin does it have? I want to take 2 teaspoons a day and don’t want to get sick |
Answer: | No expiration date. Stays years (I'm really not kidding). I always bought my granulated onion and garlic at Costco; however, they don't carry the onion anymore. The last bottle I bought had to be 21 to 3 years old. Hope this helps. |
Question: | Seller: the image looks like cassia cinnamon sticks, not ceylon. can you verify that this product is ceylon cinnamon, and not cassia cinnamon |
Answer: | Bottle information, small print on the back, says Product of China. Kirkland granulated garlic is a product of California, USA, and it says so on the bottle label. I dumped, unopened, my bottle of McCormick granulated garlic after I got it because it was from China, and ordered the Kirkland.. |
Question: | I have had my cinnamon for about a week now. i was disappointed in the grind. it is grainy and does not mix into my coffee. what can i do |
Answer: | Hello...No, McCormick does not use irradiation on any of its consumer products. ~Tina |

Ceylon Cinnamon Powder
Cinnamon is an ancient spice that comes from the bark of several species of the Cinnamomum genus of evergreen trees, which belong to the laurel family. The most popular types of cinnamon are native to Sri Lanka and China, though cinnamon is grown throughout Asia, Europe, and North America.
In antiquity, cinnamon was prized as much for its sweet, sharp, and sensuous fragrance as it was for its taste. The ancient Egyptians used cinnamon along with myrrh to embalm the dead, and the Romans burned it on funeral pyres. It was used in religious ceremonies by the ancient Hebrews and is mentioned in the Bible as an ingredient in the preparation of a holy anointing oil.
During the Middle Ages in Europe, cinnamon was a status symbol ingredient in cuisine enjoyed by the elite, brought west from Ceylon (now Sri Lanka) by Arab traders. The Portuguese took over the cinnamon trade in Ceylon during the 15th century, and centuries of fighting over the spice ensued between them, the Ceylonese, and Dutch and British colonizers. In time, cultivation of the sought-after spice spread across the globe. Today, cinnamon is more likely to evoke feelings of comfort rather than bloodlust.
The cinnamon you have in your kitchen cabinet is most likely to be Cinnamomum cassia, which is native to China and the most common type sold in the United States and Canada. Cinnamomum verum, also known as true cinnamon or Ceylon cinnamon, comes primarily from Sri Lanka. It is more delicately flavored than cassia and more highly prized, though less widely used. Other commercially available types of cinnamon include Cinnamomum burmannii (also called Indonesian cinnamon) and Cinnamomum loureiroi (also known as Vietnamese cinnamon). Many lesser-known species of the cinnamon tree exist, too
Cinnamon's unique healing abilities come from three basic types of components in the essential oils found in its bark. These oils contain active components called cinnamaldehyde, cinnamyl acetate, and cinnamyl alcohol, plus a wide range of other volatile substances :
- Anti-Clotting Actions and Anti-Microbial Activity
- Cinnamon's Scent Boosts Brain Function and Boost Metabolism
- A Traditional Warming Remedy

User questions & answers
Question: | Is it vegetarian |
Answer: | Is cassia oil the same as cinnamon oil? Both are from the same botanical family (Lauraceae) and both are derived from the bark of the plant. But they are actually from two different plants. Cassia is from Cinnamomum cassia, while cinnamon is Cinnamomum zeylanicum. It's a spicy, warm aroma, but sweeter than cinnamon. This is from the Watkins website and it states that it is NON GMO |
Question: | What is the country of origin ? any id testing ? what is yhe difference between chinese and indian cinnamon |
Answer: | If you ate a whole spoonful of it straight, it might? It's not supposed to. It's supposed to taste like cinnamon rolls, very mild but utterly delicious. |
