Tofu Zucchini Burger with Mustard Mayonnaise

Prepare Burger Patties: Finely chop 1 medium red onion, 4 cloves of garlic, 10 oz each of green and yellow zucchini and 1 lb of tofu. Sweat the onion and garlic in olive oil. Add the zucchini and tofu, saute until most of the moister is evaporated, then allow the mixture to cool.

Puree 10 oz of chickpeas and combine with the vegetable base, season with salt, pepper, olive oil and 2 Tbsp of finely chopped flat-leaf parsley. Using a round mold, make 10 firm burger patties of approx. 3.5 oz. each.

Prepare the Burger: Pan sear 10 burger patties and finish in the oven. Warm 10 burger buns. Assemble the burger with prepared tomato relish, tofu burger and top it with the prepared mustard mayonnaise and mixed greens.
