Answer: | Yes, you can use sun dried tomatoes in this dish and any of the Alessi Risotto selections. I not only use the sundried tomatoes in preparing the package, I will also include other add-ons such as a tablespoon or two of capers, fresh garlic, your favorite chopped mushrooms, a wedge of onion chopped, or anything that you can imagine that you might be served in your favorite restaurant. I have had this dish prepared "as is" with success, but I like it best with add ins and sundried tomatoes are my favorite add on. You can add as little or as much as you like. This is a good product and they have other risotto's (one that includes sundried tomatoes) that are just as good. I even add additional sundried tomatoes to the sundried risotto. Directions
Cook risotto according to package directions. Let cool completely.
In a saucepan, melt butter on medium heat. Whisk in heavy cream and garlic then season with salt and pepper. Add grated Parmesan and whisk until smooth. Simmer until thick, about 15 minutes, then remove from heat and set aside.
Beat eggs in a large bowl, add cooled risotto and 1 cup breadcrumbs; mix well.
Place remaining breadcrumbs in a shallow dish. Using 1/3 cup at a time, form risotto mixture into patties and coat with breadcrumbs.
Heat enough olive oil to cover bottom of large skillet over medium heat. In batches, fry risotto patties in hot oil until golden brown and crispy. Add more oil as needed. Drain on paper towels and serve risotto cakes with the creamy garlic sauce as a dip.

The history, versatility, and viability of Rice
The quantity and quality of the nutritional content of rice varies according to the variety and the industrial process that the grains undergo. The nutritional content of brown and parboiled rice is higher than white rice for example. Brown rice that is not polished, for example, has a higher carbohydrate and protein content but fewer calories which drop down to 100 for every hundred grams of rice.

Coeliac disease is a permanent intolerance to gluten which is a protein found in oats, wheat, spelt, kamut, barley and rye… However, it is not found in rice which makes it a vital food for coeliacs (as many as 600,000 according to estimates by the Italian Association of Coeliacs even if just over 100,000 have been diagnosed so far). Since if even small quantities of gluten are eaten, this can lead to serious consequences.
