Answer: Hi, yes, this comes to you trimmed, as a roast. Length varies based on the size of the eye, but I would estimate 6-8" in length. The eye of round, while more economical, will not give you the same results as a tenderloin., however. Hope that helps.

Answer: I believe they opt, you should ask them, not to have grading performed. They pass the savings on, I suppose, to the consumer. What I have received I would consider to be predominately at the upper end of the "choice" grade with "prime" in the mix. All the beef is well marbled. "Higher Choice" (not an official grade) is a term I have heard cutters use and I would apply All I can really attest to is that it is the most flavorful of any that I have found available excepting some Irish beef I've experienced. You can buy Waygu (Kobe) but, the texture of the Japanese beeves isn't acceptable to me so I can't speak to that product.Nebraska Star Beef vends. Hope this was helpful!

Question: At $18 per pound, I did not expect this sirloin steak to be full of tendons. Anyone find this to be true? Mostly inedible
Answer: Yes. And it dud not turn out well. Slow cooked it but dud not grill it. Dried up very quickly. Few natural juices and the marinade did not help,

Answer: I've called Amazon Fresh and Whole Foods and asked if they could cut my roast in half or in chunks. They said it was NOT possible for home delivery, only if I went in person. Will say that this is the easiest roast I've ever bought to cut up myself. It's extremely tender.
Question: It says on the title 100 % grass fed and finished. What does it mean finished
Answer: No, it comes in a loaf or rectangular shape. There are 1 or 2 pieces depending on how many pounds you order. However it's very easy to cut into a roll if you want to stuff the roast. If you buy it in person the in-store butcher will cut it into a roll if you wish.
