Stir in sugar, salt and fish sauce. Cook on medium-low heat for about an hour. Remove the spices and strain the broth using a very fine strainer or cheesecloth. Keep the broth hot to cook the meatballs in.
Meatballs: Combine all of the meatball ingredients and mix well. Cover with plastic and chill in the freezer for 30 minutes to 1 hour. Once chilled, place 1/4 of the mixture in a food processor, processing until it is a completely smooth but firm paste. Transfer the paste to another bowl. Repeat the process with the remaining beef, processing 1/4 at a time to avoid overloading your food processor. Cover the blended beef and chill in the freezer for another 30 minutes. Remove the beef mixture and, using slightly wet hands, form into meatballs slightly smaller than the size of a golf ball. In a few batches, place the meatballs into the simmering Pho Beef Broth and allow them to float and cook for 7-10 minutes. Remove the meatballs from the broth, transferring them to a bowl. Prepare to serve immediately.
Noodles: Using the directions on the packaging, cook the noodles slightly under or al dente.
To assemble, divide the cooked noodles into four bowls and top with baby bok choy (cut in half). Then add 3 meatballs to each bowl. Ladle very hot broth over the noodles, bok choy and meatballs. Answer: | My father raises cattle in eastern Colorado that are free to graze in a large open field and are not treated with antibiotics. The amount of money he spends on these cattle as is quite high. If you want beef that came from a cow raised in an open field that eats grass and that has never been injected with hormones and antibiotics, you are going to pay a premium price. If you buy beef that came from a feed lot (cows packed into a feed yard) that are fed corn and pumped full of hormones and and antibiotics, you will pay less. You will pay less when different parts of multiple different cows are ground up, packed together, and sold at a large store. Luckily, we live in a country where you have a choice to spend your money however you like. If you find Verde farms beef too expensive, then don’t buy it. Go to BJs and buy feed lot beef. This is the same concept as buying a shirt for $5 at Walmart that was made in a factory in China, or paying $50 for a shirt that was made by a small buisness operating in America. If you want quality, you have to pay for it. |

The cows are on fresh grass when pasture is in season. All of our cows also receive organic forages, especially in the winter. Forages are grass, hay, silage, baylage and other “green feeds”. Hay is simply dried plant material like grass and alfalfa. Silage and baylage are fermented or “wet” plant material. A majority of our cows diet comes from grasses and forages.
