7 best egg substitutes
Egg substitutes are alternatives to traditional eggs and are commonly used in cooking and baking, especially in breakfast foods. These substitutes are ideal for people who follow vegetarian or vegan diets, have egg allergies, or simply want to reduce their cholesterol intake. Here are some popular egg substitutes and how to use them:
Silken Tofu: Silken tofu can be blended until smooth and used in place of eggs in recipes like scrambles, quiches, and muffins. Use about 1/4 cup of blended silken tofu for each egg you're replacing.
Mashed Banana: Mashed ripe banana works well in sweet recipes like pancakes, muffins, and cakes.Use about 1/4 cup of mashed banana for each egg.
Applesauce: Unsweetened applesauce can be used in recipes where a slight apple flavor won't be a problem. Use 1/4 cup of applesauce for each egg.
Yogurt or Buttermilk: In recipes where moisture and some tanginess are desired, plain yogurt or buttermilk can be used as a substitute. Use 1/4 cup of yogurt or buttermilk for each egg.
Commercial Egg Replacers: There are several commercial egg replacers available in stores. These are often made from a combination of starches and leavening agents and work well in a variety of recipes. Follow the package instructions for the right measurements.
Chia Seeds or Flaxseeds: Mix 1 tablespoon of chia seeds or ground flaxseeds with 2.5 tablespoons of water, and let it sit for a few minutes to form a gel-like consistency. This mixture can be used as a binder in baking recipes.
Carbonated Water: In some recipes, carbonated water can be used as a leavening agent. Replace each egg with 1/4 cup of carbonated water.
Commercial Egg Replacers: There are several commercial egg replacers available in stores. These are often made from a combination of starches and leavening agents and work well in a variety of recipes. Follow the package instructions for the right measurements.
Vinegar and Baking Powder: A mixture of 1 tablespoon of vinegar (typically white or apple cider vinegar) and 1 teaspoon of baking powder can be used to replace one egg in baking recipes. This combination adds moisture and helps with leavening.
It's important to note that the choice of egg substitute can affect the flavor and texture of your final dish, so consider the specific recipe and your dietary preferences when selecting a substitute. Experimentation may be necessary to find the best replacement for a particular dish.

User questions & answers
Question: | What is the shelf life/expiration date |
Answer: | Possibly not. I've tried a couple times to bake a cake with this, and it works, but the cake doesn't bind. Depends on your recipe. I definitely suggest a binding ingredient besides this one if you want it to not be a crumbly cake. |
Question: | Is this made in a peanut free factory |
Answer: | 1-2 years. I purchased 2 boxes within the last year (I went vegan August 3rd, 2017), and they don't go bad until December of 2019. |
Question: | Can you use for scrambled eggs or omelettes |
Answer: | Don't know why not. I use it to make French toast and it turned out great. It acts just like a stirred egg and the bread soaks it up. |
Question: | What are the ingredients |
Answer: | This product has a suggested freshness range of 2 years from the lot code. The way to read the lot code would be the first two digits are the year it was made and the following three digits would be the day in the year out of 365. |

User questions & answers
Question: | Has anyone been able to use this with any success? Im on my thirs try of making mayo to no avail. Im not happy |
Answer: | Hi! I use this to make vegan marshmallows, and it works well. The trick is to use more than you think. I've been estimating that about 2 full tablespoons of powder works like one egg white. Good luck! |
Question: | What kind of date(used before/production date) is demonstrated on the product box.i suspect I got expired product & it is impossible to read the date |
Answer: | Hi, I believe that my jar's expiration date is August 26, 2019. Hope that helps! |
Question: | Would I use the same amount of aquafaba powder as I would meringue powder, 4 tbspns? I am looking for an egg replacement in icing recipes |
Answer: | We would definitely recommend experimenting with the amount of powder used in place of meringue powder. Most meringue powders include other ingredients, whereas our aquafaba powder is a very concentrated form of aquafaba and it may require less depending on the recipe. As far as an egg replacement goes, each 1/2 tablespoon of powder equates to 1 cup of liquid aquafaba. This produces 16 tablespoons of aquafaba liquid per cup. The general egg equivalency is 3 tablespoons per egg in a recipe, and 2 tablespoons of the liquid per egg white. If we assume that one egg is equal to 3 tablespoons of liquid, that would be about 20% of the initial powder put into the 1 cup of water. About 20% of that powder equates roughly to 1/8th teaspoon of our powder for a 1 egg equivalent. Now it may still need some amount of water or similar liquid to act as an egg, but this is definitely something to experiment with! |
Question: | What is the amount of this product that should be used to replace one egg white |
Answer: | If you combine 1 tablespoon of powder with 1 cup of water to reconstitute the aquafaba, you will have 16 tablespoons of liquid aquafaba. Generally the conversion is 3 tablespoons of the reconstituted liquid for a whole egg, and 2 tablespoons of liquid for an egg white. |

User questions & answers
Question: | does it work for meatloaf or meatballs |
Answer: | Yes, just follow the manufacturer's instructions. You can also use 1 Tbsp. flaxseed to 3 Tbsp. Water |
Question: | Would this work similar to powdered eggs? I don’t care I that it’s vegan |
Answer: | I do not know. You might try making some and cooking it. However, be aware it could burn, or not taste good, due to the ingredients this product is made from. It does work well in baking - I use it to make muffins. Once you mix the egg substitute, do not let it sit too long, it gets very thick and hard to mix with other ingredients. |
Question: | What if you just want scrambled eggs? Not making cakes or anything, just scrambled eggs |
Answer: | Silken Tofu with some Turmeric works well. Furthermore, Aquafaba (chickpea brine/canning liquid) is a popular substitute for not only all types of non dairy egg replacements but makes a mean scramble egg. https://www.blissfulbasil.com/vegan-scrambled-eggs-made-with-aquafaba/ |
Question: | I can not find any ingredients listing. does this product contain soy? one other of bob’s egg replacer does, and i cannot have soy either. wish the |
Answer: | Potatoe starch, tapioca flour, baking soda, psyllium husk fiber. |

User questions & answers
Question: | does this come without onion |
Answer: | Dehydrated Onion is listed on the label of this item. If there is a non onion version I'd be interested in it too! |
Question: | How many bottles do you get for this price |
Answer: | I paid $7.99 for one bottle. I added mart and veggies to the scramble. I got 3 scrambles for 2 teen boys out of it. Supplemented with toast etc. They LOVED it! It is seriously good. |
Question: | Why is it so expensive |
Answer: | If you have to order it here and the only way the seller can ship it is with super expensive packaging to keep it cool.. then thats a choice, but I just found it at kings, and know it is coming to whole foods, safeway etc. At $7.99 at the store, its still super expensive, but worth it in my opinion ($7.99) - $30+ is insane. |
Question: | In the ingredient list, what are the "natural flavors |
Answer: | Honestly I have no idea, I looked on the back and it just says "natural flavors" as an ingredient, it does not explain it any further. |
