Xanthan comes from the dried cell coat of a microorganism called Zanthomonas campestris. Though it sounds chemical, it is actually an all-natural ingredient. Xanthan gum is derived from the fermentation of corn sugars; however, all corn sugars are removed in the processing of xanthan gum. Xanthan gum contains no corn protein and is tolerated by most corn-free people. However, we certainly recognize the seriousness of food allergies and encourage you to make your own decision (or consult your doctor) regarding whether or not you feel comfortable eating this ingredient. MEET OUR FOUNDER - Shira Berk

Shira is a former entertainment public relations professional who nurtured some of America's most prominent brands in publishing and music including the Rolling Stones, US Weekly and alternative record label Beggars Banquet.

After existing the music business, our fearless leader, began channeling her creative energy into making great tasting treats at her small Goodie Girl cafe in Tribeca. Answer:	honestly, it was so good it did not last that long in the refrigerator. we could not tell it was gluten-free at all, it was good. only lasted a day or two cause we ate it all, and it is a huge piece. I don't know if it would freeze well or not, sorry

Answer:	I believe it has no allergens. It has very unhealthy ingredients like sugar and processed, refined things (cannot remember which ones) it is delicious and nice to eat when everyone has birthday cake. Definitely has dairy.

Answer:	This was delivered in mid afternoon on a hot day. It came packed in the white Amazon freezer packets used to keep food cold. That worked very well. It was probably 95% frozen, so I put it in the freezer. A week later I took it out and it was mostly eaten at a birthday party. So, yes ours was frozen. For an off the shelf deliver to the door item, I think it is remarkably tasty. It is not a health food but in small doses is acceptable nutritionally.

The Original Cakerie founders, Doug McFetridge and Kent Norris, started off in 1979 running a small bakery in the city of Victoria, British Columbia. Those early days were spent lovingly producing high-quality desserts for local restaurants in the area (the most popular item being carrot cake)!
