The Phoenix Mountains (Fenghuang Shan) in Guangdong, China are home to famous varietals of oolong teas. In our last visit to this area, we studied at least seven different varietals. Notable and popular among these varietals is “Mi Lan” or “Honey Orchid.” Our name for it is Royal Phoenix.



The Phoenix teas are known as ‘Dancong’, which refers to the unique single trunk structure of the plant. Many other varietals grow in multi-trunk structures.



Another unique aspect of the Phoenix varietals is that the newly sprouted tip evolves into a large, full leaf very quickly. The twisted leaf oolong processing style, which requires long leaves, is therefore often used on Phoenix teas.



Making Royal Phoenix oolong involves precise rolling and baking techniques to fully develop its characteristic texture and fragrance. The roaster is a tunnel roaster (similar to a coffee roaster) that rotates, while the leaves are tumbled with convection heat.



An area within Fenghuang Shan is Wudong mountain, home to old growth tea plants. Sourcing tea from Wudong is a challenge due to its popularity and limited availability, but we are hoping to start bringing you selective teas of that region also.



Our grower of Royal Phoenix is a second generation tea farmer. After inheriting the business from his father, he has been steadily making progress towards better agricultural standards and improving the processing factory.

HONORING OLD WISDOM

Making handcrafted tea has become less common over the years in favor of more modern, mechanized methods. In China, the old style roasting of green tea leaves in a wok over fire has given way to electric woks or industrialized ovens and roasters. Rolling of Oolong tea leaves by hand in Taiwan has given way to mechanical presses that mimic these hand movements. The most sophisticated modern methods can probably be found in Japan, where color sorting of leaves is done by laser-guided machines. Although these methods have allowed more yield for farmers, they are a departure from the art of the leaf.

Our focus is to offer teas that have been made per old-style methods. These approaches vary with the landscape and few remain committed to the raw form of tea spirit. Our work attempts to provide new infusions of energy and channels for traditional skills to be recognized.

Green Dragon tea is grown in the mountains of Anxi county, Fujian, the most famous oolong growing region in China. There are several oolong tea plant varietals (at least 12) growing in Anxi, each with its own distinct flavor profile, the most famous being Tieguanyin. Green Dragon, or Ben Shan, is a young varietal (a clonal), grown primarily near Raoyang village in Anxi. The plant has strong, heavy branches and brightly colored, distinct, ellipse-shaped leaves. It shares some similarities in fragrance with the Tieguanyin varietal.



Oolongs range in their flavor (mild and floral to strong and toasty) and color spectrum (from light green to dark) depending on the processing technique adopted. Ben Shan is a greener oolong with low oxidization.



For Ben Shan, mature leaves are plucked and then withered in the sun (weather permitting) for a few hours to reduce moisture.



Once suitable suppleness is achieved in the leaves, traditional rolling techniques (which include wrapping the leaves in cloth and binding it tightly into ball shape) are applied in conjunction with light roasting. Successive re-rollings and re-roastings are done to achieve the optimum shape and flavor. A final roast is given to complete the processing.



Ben Shan is best during spring (April-May), but if stored well (cool, dark, low humidity place) it maintains its flavor well throughout the year.

Answer:	If you are worried about the caffeine get the decaf product . I bought the peach and it was great.

Answer:	the peach oolong is not exactly the same as the old peach tea flavor. It seems they are phasing out most of the old recipes and introducing new ones. It tastes similar, but to me the tea flavor seems a bit stronger and the peach flavor is a bit weaker. However, if you liked the old peach flavor, then I expect you will like this too.

Answer:	No. Have you had your taste buds checked? Perhaps the water you used to prepare the tea or wash the cup/pot the tea was prepared in?

Answer:	I have experience with the 50 and 100 count packages of English Breakfast. Both are bagged tea, but the 100 count are each individually wrapped in a paper/foil pack. The 50 count is bags, loose in the container. Actually two bags connected by a thin perforation. The 50 count are perfect for using in a pot. The bags are full sized, and two bags will make four cups of strong tea. I use three bags per four cups, but I like it strong enough to stand up without a cup. The 100 count are not only annoying to unwrap each bag if you're using multiples in a pot, but they're also not as large (and more powdery). They make one cup each bag, and no more,. I really wish they sold the 50 style packaging in a larger bulk count.

Answer:	The gift box is made of cardboard. I found it to be very presentable. I gave it as a gift. I have been drinking Taylors of Harrogate teas for many years. Ever since my son gave me the gift of a box of Yorkshire Tea he picked up while on a business trip to London. I order my Taylors of Harrogate teas from Amazon. A similar box with eight compartments made of wood would cost an additional $20 to $30 depending on the type of wood. I recently gave a gift and the single compartment cedar wood "rustic presentation box" cost 6.95 pounds (about $11.47). When I gave this gift I was thinking of giving quality teas not a wood box.

Answer:	I think the problem with inconsistent taste is an issue of storage. It says "Do not heat bottle" right on the bottle. I believe the product is being stored in hot, unairconditioned conditions during the summer months, and this is to blame for the awful batches. The flavor seems consistently good during the colder months.

Answer:	Early Grey is NOT decaf but it is far light in caffein. It is "Earl Grey" means early evening! just as it is about to get dark and grey towards the night is when this tea is for BUT as a person who is sensitive to caffein I drink this in the morning. I also have had it at night too, it is not a tranquilizer but surely did not keep me up all night, so I consider it safe. Also, there is de-caffeinated version of the same and remember if you are a tea expert and tea lover, you can always play with the percentage of caffein in your cup buy adjusting the water temperature. Sometimes steeping your tea bag in a cool water before dropping it in a hot cup makes the caffein not release as much. This is good when you are stuck at someone's house being offered a full caffein strong tea :-). But the Bergamot essence is what makes this particular tea irresistible and some studies show that it is relaxant, so perfect treat for an evening chill. Answer:	Nespresso is, to put it simply, the brand name of a coffee machine. Other brands are available but Nespresso is one of the largest in the world. Typically they include coffee capsules (also known as coffee pods) to be inserted into the machine in question. But you really have to tack on the model of the machine when you talk about Nespresso brand. Lattissima is a specific range of Nespresso machines and represents a product line under the Nespresso brand. Typically, Lattissima machines refer to Nespresso machines designed milk-based espresso coffee (the clue is in the name – think latte!). They almost always have a milk tank clearly visible in the front of the machine by default. Answer:	Oolong tea, black tea, and green tea all come from the same source, an antioxidant rich plant called Camellia sinensis. Their main difference lies in the way they are processed. Oolong and black teas are processed by fermenting and crushing, while green tea is wilted and steamed. Oolong being a blacker tea than green tea has more caffeine.

Answer:	Goldfish and mosquito fish are very good together. You should have no issues with the two species co-habituating.
Question:	I could not locate your organic certification on the ccof and usda.gov websites. can you supply supporting documentation
Answer:	Goldfish are a pretty hardy fish and do well in a wide range of temperatures. We ship them out on Spring water that is around 56 degrees. During shipping that temperature will warm up considerably. The most important thing is to acclimate the water temperatures properly before releasing your fish. Once you receive your fish float the bag 30 minutes to an hour. The goal is to get the water temperature in the bag as close as possible to the water you are transferring them into.

Start with water

1. Start by adding cold, filtered water to your favorite tea kettle
2. Heat the water to about 190 degrees, or just as it starts boiling
3. Pour a small amount of hot water into your mug to warm the mug, swirl the water around and pour it out

Steeping time

1. Drop a tea bag into your favorite mug
2. Pour hot water into the mug, over the tea
3. Steep the tea for 3-5 minutes

1. Once properly steeped and strained, add what you'd like to suit your tastes (but it's equally delicious on its own!)
