Of all the coffee producing countries, Ethiopia is perhaps the most famous and compelling. The fascination with Ethiopian coffee comes not only from the unusual, astonishing coffee it produces, but perhaps, also from the mystery that shrouds so much of it. The explosively floral and fruity coffees from Ethiopia have opened many a coffee lover’s eyes to the amazing diversity of flavor that coffee can have. Ethiopia is considered by many to be the birthplace of coffee. Harvesting coffee cherries from the wild Arabica Ethiopian heirloom coffee plants for export first began around the 16th century. Today variations of these plants are grown in many countries around the world. But even today, centuries later, it is still very difficult to find better tasting coffees than the Ethiopian heirloom coffees. These Ethiopian coffees are hand-picked and then milled and processed in 2 very distinctively different ways. 1) The original centuries old practice is Natural Processing. This consists of picking the ripe coffee cherries and letting them dry naturally in the sunshine on raised beds with the coffee seeds (beans) still inside the cherry. Once the cherries have dried they are run through the mill which separates the coffee seeds out of the parchment. This method creates a very fruity and floral cup with usually a much softer milder acidity. 2) The newer Washed Processing consists of picking ripe cherries and then running them through the mill and pulping the coffee seeds out of the coffee cherries. They go then to the wash tanks where the remaining cherry mucilage is washed off the coffee seeds. The seeds are then placed on the drying beds and sun dried to about 11% moisture. This washed method results in cup that is much brighter and cleaner tasting than a natural processed coffee. This brighter cleaner taste comes from a higher acidity in the beans. So in review – the natural process produces more berry/fruity notes – and the washed process produces a brighter cleaner cup.

Answer: If they are not shriveled or covered in mold, you can trust that they are ready for roasting. In a covered container or burlap sack, they will keep indefinitely in a dark cool place. Roast enough for a few days or a week because they are best when freshly roasted. Because of medication, I have had to cut back on drinking coffee - even decaf - so the last beans were purchased three years ago. I only indulge once a week so I roast enough beans for two pots and enough to serve expected guests for one week. I usually buy 3-5 pounds at a time. Always get compliments on the coffee I serve.

Answer: glad to know i'm not alone in this! i just roasted these beans last night and waited for first cracks ... and waited ... and waited. before i knew it, the beans went right into second cracks after a long period of "roasting silence". don't know why, either.... but if you say yours came out delicious anyway, then i'm gonna hold on to these, let 'em rest a few days and give em a try. i used the sr500 freshroast, and normally i'll hear first cracks start somewhere between 5-7 minutes with other beans that i've roasted; but with these beans, there was silence for almost 12 minutes before the "rice krispies" cracks (2nd cracks) started cracking, and thought it was odd that i never really heard a pass through the first cracks. oh well, hope mine turn out to be delicious like yours. btw, how many days rest did you give it?
Question: How old are these beans
Answer: These are the 2015 crop. The new crop in this region is finished up in April generally, and we do not have our shipment yet. But there is a persistent myth that new crop beans are better. Coffee beans are seeds, they are not fresh produce like tomatoes. Aging is a good thing, like with tea. On most of our prized coffees like the Costa Rica Nectar, people crave the mature beans. When properly stored, the sugars convert to caramel and butter tones. In my opinion, these beans are at peak and will remain so for at least 6 months. They are stunningly fragrant and flavorful in darker roasts, and we get more raves from our customers every month. The new crop will be sweeter and fruitier but it will not have developed those butter and caramel tones yet, it will take at least 2-3 more months for me to consider the new crop equivalent to the previous crop the way it is now. But everybody has different preferences.
Question: Are these beans processed naturally or washed
Answer: If you read the description they are supposed to be naturally. When I roast them they are full of chaf so they were not washed. I don't want beans that were washed greater chance of dirty water and mold on the beans.

Answer: I believe it is a matter of how you like your coffee. We prefer a dark roast, and so we roast the beans to the point where they just begin to glisten (Oils begin coming to the surface of the bean).
