Answer: If a person's business requires that they have an espresso machine available 24-7-365-10, (or whatever your opening hours are) you will need a back-up machine. Also, if the machine is kept on so it is ready instantly to make an espresso it will reduce the life of the boiler coil, and perhaps other components too. The tank, if washed and dried at the end of the day and then filled the next day would support at least 10 espressos if not 15. Frothing milk to get microfoam is a learned experience, and the machine pictured has a new frother that would work differently than what I have so I cannot comment on the ability of the current X1 to make microfoam other than to say that over the decades since the x-1 was first produced with an aluminum boiler, to 3 or 4 years ago when I bought my last one, illy has continually upgraded the machine. The one I have today works much better than the one I had in 2002. I certainly like it for home use (although I do use a model that has a portafilter that accepts ground coffee, not pods.) A number of the arguments above including employee time required might suggest that a more professional machine might serve a business better.
