Answer:	My personal take on this is that there is technically little difference in the type of wood (black walnut vs. maple). However, when I'm working with a light colored dough, the black walnut makes it easier for me to determine how thick I'm rolling the dough, etc. When I'm working with a chocolate or dark colored dough, the maple showcases my work better.
