Sample Recipe: Buenas DIas Burrito
1. In a skillet, melt the butter over medium heat. Crack the eggs into a bowl and beat them together with a whisk. Pour the eggs into the skillet. Using a wooden spoon or spatula, stir the eggs around the pan to scramble them (1 to 1½ minutes should be about perfect). Remove the pan from the heat and set aside.
2. 2. Set the tortilla on a plate and put the hot eggs in a line down the middle of the tortilla. Sprinkle on the cheese and black beans, and then add the salsa and avocado slices. Top with sour cream. Sprinkle with the cumin. Roll up the tortilla, folding in one end so all of the tasty ingredients don’t fall out. Time to eat! Buenos días!
Directions:
1. In a skillet, heat a little oil over medium heat and warm the tortillas one at a time, cooking them for a minute or so on each side. (Yes, you could just microwave a stack of tortillas, but the skillet gives them a better taste!) As they are done, slide them onto plates for guests to start building their burritos.
Directions Continued:
2. Hand around a bag of chips for people to scoop up whatever falls out of the burritos!
