Nutty Coconut Baked Apples with Cider Sauce

If you have a hankering for apple pie, but can’t seem to nail down a grain-free pie crust (I feel your pain), this is a great alternative. You have the same soft, juicy apples, but with a sweet-tart cider sauce and a chewy nut-coconut mixture for contrast. Add a dollop of Whipped Coconut Cream (page 000) and you’ve got the perfect bowl of autumn.

Directions

Arrange the apples in a 6-quart (5.7 liter) slow cooker—just to make sure you’ve got room for all of them.

Hollow out each apple by cutting an inch or so around the stem, toward the center. Remove the top and scoop out the core and seeds with a spoon. You don’t need to scrape out additional apple flesh. Squirt the insides and cut edges with the lemon juice to prevent browning.

In a medium bowl, combine the walnuts, coconut, and dates. Drizzle in the honey and add the cinnamon, salt, and nutmeg. Mix well.

Fill each apple with the nut mixture, pressing it in tightly. You may have a little bit of filling leftover.

Add the cider, ghee, and coconut sugar to the slow cooker. Arrange the apples in the cider, standing upright.

Cover and cook on low for 3 hours.

Remove apples carefully with tongs and transfer them to a serving platter. Pour the cider syrup into a small bowl.

Serve each apple with a generous drizzle of cider syrup and a dollop of Whipped Coconut Cream.

Korean Chile-Braised Brisket + Kimchi Coleslaw

1. Rub the beef with the chile flakes, paprika, salt, and pepper. Cover and refrigerate for 1 hour and up to 24 hours.

2. Set the electric pressure cooker to saute (or use a large skillet). Add a tablespoon of the oil, let it heat up for a few seconds, and then add a batch of the beef and sear until it’s browned all over, about 2 minutes per side, adding more oil as needed. Transfer the beef to a plate and repeat with the remaining batches.

3. If the pot looks dry, add a bit more oil. Add the onion and saute until golden, 3 to 5 minutes. Add the garlic and ginger and saute for 1 minute longer. Add the beer, gochujang, ketchup, soy sauce, brown sugar, fish sauce, and sesame oil. Scrape the mixture into the pressure cooker if you have used a skillet.

4. Cover and cook on high pressure for 90 minutes. Let the pressure release naturally for 20 minutes, and then release the remaining pressure manually.

5. To make the kimchi coleslaw, combine the cabbage, kimchi, both oils, lime juice, and salt in a large bowl and toss well. Taste, and add more salt or lime juice if needed.

6. Transfer the beef to a plate or a rimmed cutting board and tent with foil to keep warm. Set the pressure cooker to saute and simmer the sauce for 15 to 20 minutes, until it is reduced by half or two-thirds (remember that it thickens as it cools). Use a fat separator to skim off the fat, or let the sauce settle and spoon the fat off the top. Serve the sauce alongside the beef, with the kimchi coleslaw.

Answer:	Hi...The overall demensions on the inside are very little difference from outside demensions so I assume you are meaning the little squares on the inside for each glass, which are 4"x4"x7 3/4" which are more than adequate for a wine goblet; the larger size container is 4x4x9 1/2 inches. They are very well padded and cardboard separate glass holder are sturdy cardboard. I bought 2 and very satisfied. However, If you are looking for containers that can stack on top of each other, I would be cautious depending on the weight of the glassware. Probably could go two high. Anyway, worth the money. Answer:	The canvas like material is a little more than an 1/8" so the inside dimensions are about 1/4" less than what is quoted. There is some pliability or elasticity but they are very good quality. I have about 700 pieces of Waterford and other items stored in them and they are of excellent quality. I like that I can see what is in them and that they have handles and a durable top, so a light object can be placed on them during storage. The inserts are just regular cardboard.
